Mooi moment voor het maken een eenvoudig voorgerecht. Een hammousse met een knipoog naar de Bourgondische klassieke jambon persill\u00e9. Deze ham in gelei zie je in Bourgondi\u00eb bij elke traiteur staan, rond, conisch gevuld met ham en gehakte peterselie. Een handig voorgerecht of gezellige hap bij een wijnproeverij. ik weet nu als dat deze in deel twee van &#8220;Gereons Keuken Thuis&#8221; komt. \u00a0De wijn bij dit gerecht is een witte M\u00e2con Mancey.<\/h4>\n<p>&nbsp;<\/p>\n<h4><\/h4>\n<p><span style=\"font-size: 14px;\">Nodig 4 personen:\u00a0<\/span><\/p>\n<h4>3 blaadjes gelatine<\/h4>\n<h4>koud water<\/h4>\n<h4>olie<\/h4>\n<h4>50 ml slagroom<\/h4>\n<h4>2 dl witte wijn<\/h4>\n<h4>1 el Dijon mosterd<\/h4>\n<h4>250 g ham<\/h4>\n<h4>peterselie<\/h4>\n<h4>2 el mayonaise<\/h4>\n<h4>citroensap<\/h4>\n<h4>peper en zout<\/h4>\n<div>4 glaasjes en plasticfolie<\/div>\n<div><\/div>\n<div>\n<p>&nbsp;<\/p>\n<p>Bereiding:<\/p>\n<\/div>\n<div><\/div>\n<div>Week de gelatineblaadjes in koud water. Klop de slagroom stijf. Bekleed de glaasjes van binnen met plastic folie. Verwarm de wijn in een pan, los hierin de gelatine op. Hak de ham heel fijn. Voeg de ham en peterselie toe aan de wijn. Laat iets afkoelen. Voeg wat peper en zout toe. Als het geheel goed is afgekoeld roer je de mayonaise,wat citroensap en mosterd door het mengsel. Om te voorkomen dat de ham naar de bodem zakt spatel je als laatste de slagroom erdoor. Proef of de mousse goed op smaak is.Vul de glaasjes met de mousse en zet enkele uren in de ijskast. serveer de mousse op een bordje. de mousse eruit halen gaat makkelijk door het folie.
