Klop de slagroom stijf. Bekleed de glaasjes van binnen met plastic folie. Verwarm de wijn in een pan, los hierin de gelatine op. Hak de ham heel fijn. Voeg de ham en peterselie toe aan de wijn. Laat iets afkoelen. Voeg wat peper en zout toe. Als het geheel goed is afgekoeld roer je de mayonaise,wat citroensap en mosterd door het mengsel. Om te voorkomen dat de ham naar de bodem zakt spatel je als laatste de slagroom erdoor. Proef of de mousse goed op smaak is.Vul de glaasjes met de mousse en zet enkele uren in de ijskast. serveer de mousse op een bordje. de mousse eruit halen gaat makkelijk door het folie.
