(tot en met 15 september a.s.) Vandaag met een inzending van mijn schoolvriendin Meggy Timmer- Oostdijck uit Vaassen. Wij kennen elkaar van gymnasium Beekvliet. Gastblogger Meggy studeerde Spaans en belandde in de reiswereld. Zij zag alle hoeken en gaten van de wereld. Tegenwoordig coacht ze en geeft ze workshops<a href=\"https:\/\/www.metzielenzaligheid.nl\/\"> met Ziel &amp; zaligheid,<\/a> in haar heerlijke boomgaard, waarbij je leert uit de sleur van je werk of alledag te stappen en met hernieuwde energie er weer tegenaan te gaan. Dat daarbij iets lekkers hoort spreekt vanzelf. Meggy stuurde special voor de #alfresco zomer een lekker gerecht in van het eiland Mallorca, berenjenas rellenas. De slager van het lommerrijke Sa Pobla had mij uitgenodigd voor het diner. Na een vooraf van sobresada, jamon serrano en olijfjes kregen we als hoofdgerecht berenjenas rellenas, gevulde aubergines. Echt zo verrukkelijk! Ik deel het recept graag met anderen, en ook al smaakt het niet helemaal zoals toen, is het toch een fijn zomers gerecht.<\/span><\/span><\/p>\n<p class=\"separator\" data-blogger-escaped-style=\"clear: both; position: relative;\"><span style=\"font-family: inherit; font-size: 1rem;\">Kook de aubergines een kwartiertje zodat ze zacht worden. Hol ze uit en laat een beetje aan de schil zitten. Meng alle ingredi\u00ebnten plus de aubergine pulp door elkaar en vul de aubergines ermee. Doe de tomatensaus in een ovenschaal en leg de aubergines erin. Verwarm de oven voor tot 180 graden en zet de schotel 30 minuten in de oven tot het gehakt gaar is. Lekker met een frisse salade en stokbrood om in de saus te dopen.<\/span><\/div>\n<div class=\"_1mf _1mj\" data-blogger-escaped-data-offset-key=\"a11t7-0-0\" data-blogger-escaped-style=\"direction: ltr; position: relative;\"><\/div>\n<div class=\"_1mf _1mj\" data-blogger-escaped-data-offset-key=\"a11t7-0-0\" data-blogger-escaped-style=\"direction: ltr; position: relative;\">\n<p><span data-blogger-escaped-data-offset-key=\"a11t7-0-0\"><span style=\"font-family: inherit;\" data-blogger-escaped-style=\"font-family: inherit;\">Gereon weet er vast wel een passende wijn bij of probeer eens een tinto de verano, een rood slobberwijntje met gazeuse limonade.
