Niet alleen voor de kunst, maar ook voor schilderijen van eten en drinken. E\u00e9n van de mooiste is te zien op de afdeling Middeleeuwen van Joachim Beukelaer, de welvoorziene keuken,, een schilderij vol exotisch eten, dat men al kende in 16e eeuws Antwerpen. Maar ook de food schilderijen in de eregalerij mogen er wezen. Ik deed eens onderzoek voor een Amerikaans kookboek, over de betekenis van eten op 17e eeuwse schilderijen. De eerste kassen werden gebouwd om de stad te voorzien via het water van allerlei groenten. De eerste echte kookboeken werden gepubliceerd. Schepen van de Oost- en West Indische Compagnie brachten allerlei nieuwe waar mee. Koffie, thee, servies specerijen. Ga eens kijken bij de bijzondere collecties van het Rijks. En er was meer op culinair gebied dan we denken. Gevogelte, hert, oesters krabben, zwijn, zalm. Wijn kwam vanuit heel Europa. Natuurlijk niet voor de allerarmsten, die dronken bier, maar je kunt in het algemeen wel zeggen dat gevarieerd eten meer beschikbaar werd. Voor de burgers van de Hollandse steden. Graan voor patisserie, wit brood ipv rogge etc. <\/span><\/div>\n<\/div>\n<div class=\"\" data-block=\"true\" data-editor=\"e0lti\" data-offset-key=\"3dqtu-0-0\">\n<div class=\"_1mf _1mj\" data-offset-key=\"3dqtu-0-0\"><span data-offset-key=\"3dqtu-0-0\">Ook een leuke tip in dit verband is om de Bijzondere collecties van de Universiteit van Amsterdam te bezoeken. Zij hebben hele leuke oude boeken met recepten. Op afspraak in te zien.<\/span><\/div>\n<\/div>\n<div class=\"\" data-block=\"true\" data-editor=\"e0lti\" data-offset-key=\"2r82g-0-0\">\n<div class=\"_1mf _1mj\" data-offset-key=\"2r82g-0-0\"><span data-offset-key=\"2r82g-0-0\">Vorige maand was ik bij de presentatie van het Kookboek van de Gouden Eeuw. Schrijfster Manon Henzen verdiepte zich in de geschiedenis van de Nederlandse keuken, over boter maken, zalm zouten, frikadellen en hoenderpastei met hanekammen. Marsepein en wijn van de goden.<\/span><\/div>\n<\/div>\n<div class=\"\" data-block=\"true\" data-editor=\"e0lti\" data-offset-key=\"4qf5i-0-0\">\n<div class=\"_1mf _1mj\" data-offset-key=\"4qf5i-0-0\"><span data-offset-key=\"4qf5i-0-0\">In haar boekje kwam ik een alleraardigst recept tegen van kervelsop. Dat eten we tegenwoordig niet vaak meer. Ik maakte een variant met peterselie en spinazie. Ik ben me ervan bewust dat kervel niet op elke straathoek verkrijgbaar is. Kneus het venkelzaad in een vijzel. Breng de melk aan met de groente en peterselie aan de kook en houd kort tegen de kook aan. Zo\u2019n minuut of 3. Rooster de boterhammen en snijd deze in blokjes. Klop de eieren los. Laat de soep iets afkoelen en voeg de eieren toe. Kijk uit dat de soep niet meer kookt.
