Het is alweer heel wat jaren geleden, dat ik begon met het geven van kookworkshops in den lande. Voor allerlei feesten en partijen. Op allerlei plekken. Tapas maken, Italiaans dineren, bistromenuutjes en moleculair koken. Er viel heel wat te ontwikkelen en te ontdekken. Elke keer een ander thema. E\u00e9n van mijn workshops noemde ik de &#8220;bocadillosbar&#8221;. Lekkere canap\u00e9s in Spaanse sferen. Ol\u00e9! Aan de slag in de tuin, onder de bomen, met een glas wijn in de hand. Gezellig bocadillos maken. Het zonnetje scheen. De sfeer zat er meteen in. Zomer is het natuurlijk op deze zaterdag van Driekoningen niet, maar je kunt er binnen ook een gran fiesta van maken. Lekker aan de slag met broodjes en garnituren. Wat onvervalste Sevillanas op de draaitafel en aan de slag.\u00a0<\/span><span style=\"font-family: inherit;\" data-blogger-escaped-style=\"font-family: inherit;\">We drinken er een koude witte albari\u00f1o bij. Of wat feestelijker een glaasje Catalaanse cava.<\/span><\/p>\n<p><b>Mijn bocadillosbar<\/b><\/p>\n<p><span style=\"font-family: inherit;\" data-blogger-escaped-style=\"font-family: inherit;\"><br \/>\nRooster plakjes brood in de oven met een beetje olie\/knoflook Je kunt ze met de onderstaande salsa\u2019s\u00a0of beleg combineren. Tip: snijd de broodjes niet te dik en een beetje schuin.<\/p>\n<p><i>Tomatensalsa:\u00a0<\/i>Ontvel 4 tomaten, haal de pitjes eruit en snijd ze fijn. Snijd 2 bosuitjes en wat koriander fijn. Meng het met\u00a0olijfolie, peper en zout.<\/span><\/p>\n<div>\n<p><span style=\"font-family: inherit;\" data-blogger-escaped-style=\"font-family: inherit;\"><i>Aioli-ansjoviscr\u00e8me:\u00a0<\/i>Meng wat mayonaise, cr\u00e8me fra\u00eeche, gehakte knoflook en heel fijn gesneden ansjovis.<\/p>\n<p><i>Tomaat\/schapenkaas:\u00a0<\/i>Snijd manchegokaas en tomaten in plakjes. Beleg de broodjes hiermee. Garneer de broodjes met\u00a0<\/span><span style=\"font-family: inherit; font-size: 1rem;\">wat oregano.<\/span><\/p>\n<\/div>\n<div>\n<p><span style=\"font-family: inherit;\" data-blogger-escaped-style=\"font-family: inherit;\"><i>Verse zalmtartaar:\u00a0<\/i>Snijd de zalm fijn en meng dit met citroensap en karnemelk. Laat het in het zuur een paar uur marineren,\u00a0hierdoor gaart de zalm. Breng het op smaak met peper, zout en verse dille.<\/span><\/p>\n<p><span style=\"font-family: inherit;\" data-blogger-escaped-style=\"font-family: inherit;\"><i>Gefrituurde calamares met citroensalsaverde :<\/i><\/span>Maak van citroen, olijfolie, verse kruiden als bieslook, peterselie en wat gekookte erwtjes een salsa verder. Frituur wat inktvisringen. (makkelijk verkrijgbaar bij de meeste Marrokkaanse winkels) Beleg de broodjes met wat salsa en een krokante inktvisring.<\/p>\n<p><span style=\"font-family: inherit;\" data-blogger-escaped-style=\"font-family: inherit;\"><i>Vijgen met\u00a0 serranoham en verse roomkaas:\u00a0<\/i>Snijd de vijg in acht stukjes. Smeer er een beetje roomkaas op het brood. Leg er een plakje serranoham\u00a0op. En dan een stukje verse vijg. Je kunt dit ook met dadels doen, als verse vijgen niet in het\u00a0seizoen zijn.<\/span><\/p>\n<p><i>Gekookte mosselen met aioli:\u00a0<\/i>Maak met knoflook, eidooiers en een staafmixer een gladde aioli.Kruid de aioli af met wat piment\u00f3n de la Vera In het boek\u00a0<a href=\"http:\/\/gereonskeukenthuis.nl\/blog\/3939-2\/\">Sabor! sabor!<\/a>\u00a0van Sandra Alvarez vind je mooie recepten voor deze saus. Beleg de broodjes met wat gekookte mosseltjes en een schepje aioli. Garneer met wat peterselie.<\/p>\n<p><i>Bocadillos met geroosterde bacon en dadelpasta:\u00a0<\/i>Een variant op datiles con beicon. Maar dan op een broodjes. Ontpit de dadels en maal ze met een klein scheutje balsamico fijn tot een pasta.
