Ik weet niet of het hier in de Languedoc vloeken in de kerk is, met de verscheidene cassoulets, die je vindt hier, maar het recept met broccoli van Alice Zaslavsky wil ik je zeker niet onthouden op deze zaterdagmorgen. Zij noemt deze cassoulet zelf een stevige bekleder van je kishke. GKT gaat voor eendenvet.<\/p>\n\n\n\n<p>1 grote ui in dunne ringen gesneden<\/p>\n\n\n\n<p>1 bleekselderijstengel in dunne reepjes<\/p>\n\n\n\n<p>15 g spek of ontbijtpek in reepjes<\/p>\n\n\n\n<p>1 hele bol knoflook, gepeld en grof gehakt<\/p>\n\n\n\n<p>2 takjes tijm<\/p>\n\n\n\n<p>2 laurierblaadjes<\/p>\n\n\n\n<p>1 tl tomatenpuree<\/p>\n\n\n\n<p>1 tl piment\u00f3n de la Vera<\/p>\n\n\n\n<p>60 ml witte Oc wijn<\/p>\n\n\n\n<p>500 ml kippen- of groentenbouillon<\/p>\n\n\n\n<p>3 stronkjes broccoli, roosjes afgesneden en steel geschild en in stukjes<\/p>\n\n\n\n<p>400 g Limabonen of witte bonen uit blik uitgelekt<\/p>\n\n\n\n<p>Voor de cr\u00f6ute:<\/p>\n\n\n\n<p>100 g vers paneermeel of panko<\/p>\n\n\n\n<p>50 g geraste harde kaas, Parmezaanse of Gruy\u00e8re<\/p>\n\n\n\n<p>een dash gehakte peterselie<\/p>\n\n\n\n<p>1\/4 tl piment\u00f3n de la Vera<\/p>\n\n\n\n<p>peper en zout<\/p>\n\n\n\n<p>Bereiding:<\/p>\n\n\n\n<p>Verwarm je oven voor op 200 \u00b0Celcius. Verhit de helft van de olijfolie en het eendenvet in een pan met een dikke bodem of een gietijzeren Franse Pan op een matig vuur. Bak de ui, de bleekselderij en spek gedurende 10 tot 15 minuten tot de ui zacht is en het spek goudkleurig wordt en begint te krullen. Op een gegeven moment zal alles eruit gaan zien als een zwetend rommeltje, maar blijf bij de les. Zodra de vloeistof verdampt en het spekvet smelt gaat het helemaal goed. (de woorden van Zaslavsky) Voeg de bol knoflook, tijm, laurierbladeren, tomatenpuree en de piment\u00f3n toe en roer goed. (en snuif de geur goed op, ooooh yeah) Blus het geheel af met de wittewijn en voeg de bouillon, de bonen en brocoolisteeltjes toe. Laat het geheel 8 minuten sudderen, of tot de vloeistof nadat hij aan de kook is gekomen met een derde is ingekookt. Zaslavsky raadt je aan het gas hoger te draaien als je het proces wilt versnellen. <\/p>\n\n\n\n<p>Meng ondertussen de ingredi\u00ebnten voor de cr\u00f6ute in een kom met wat olijfolie en eendenvet. Hussel de broccoliroosjes door wat olijfolie tot ze goed omhuld zijn. Profe de cassoulet nadat je de broccoli erdoor heb gemengd en maak op smak met wat zout en peper. Om een GKT onduidelijke reden laat Alice Zaslavsky zout en peper weg?&nbsp; Doe het gerecht in een ca\u00e7ola.
