Onder het mom: &#8220;Vous parlez Occitan sans le savoir.&#8221; worden hedendaagse uitdrukkingen in het standaard Frans gekoppeld aan de magie van de Occitaanse taal. Een beetje chauvinisme kan geen kwaad. <\/p>\n\n\n\n<p>Uit het hart van Occitani\u00eb  een recept voor bougnettes Albigeoises, balletjes van fijngemalen en in vet gegaard vlees van een varkenshoofd. Bewaard in stenen potten onder een laag reuzel. Je verwarmt ze nadien in hete soep of in het vet zelf.<\/p>\n\n\n\n<p><strong>Het recept.<\/strong><\/p>\n\n\n\n<p>Nodig:<\/p>\n\n\n\n<p>300 g broodkruim<\/p>\n\n\n\n<p>melk<\/p>\n\n\n\n<p>6 eieren<\/p>\n\n\n\n<p>1,5 kg vet en mager vlees van een varkenshoofd of ander gemalen vlees.<\/p>\n\n\n\n<p>4 tenen knoflook fijngehakt<\/p>\n\n\n\n<p>6 takjes peterselie gehakt<\/p>\n\n\n\n<p>peper &amp; zout<\/p>\n\n\n\n<p>2 tl quatre \u00e9pices (Ducros)<\/p>\n\n\n\n<p>brede stukken spekvet&nbsp;<\/p>\n\n\n\n<p>50 g reuzel<\/p>\n\n\n\n<p>Bereiding:<\/p>\n\n\n\n<p>Week het broodkruim in melk en klop de eieren erdoor. Laat een paar uur rustig staan in de ijskast. Maal het varkenshoofdvlees fijn en meng dit gehakt door het melk-, broodkruim- en eierenmengsel. Voeg de fijngehakte knoflook toe, de peterselie, peper &amp; zout en de quatre \u00e9pices. Maak het geheel goed op smaak. Week het vetspek in warm water en rek het uit. Snijd het in 12 stukken. Maak twaalf platte balletjes en rol deze in het uitgerekte spekvet. Smelt 50 g reuzel in een gietijzeren pan en leg hierin de bougnettes naast elkaar met nog wat extra reuzel erboven op. Bak de balletjes in 40 minuten gaar in de oven op middelhoge temperatuur. Keer ze halverwege om. Laat daarna rustig afkoelen. Doe de bougnettes in aardenwerk potten of in gesteriliseerde glazen potten met genoeg reuzel om ze volledig te bedekken.
