Dit hotel is al meer dan 250 jaar een pleisterplaats in dit kleine stadje in Zuid Bourgondi\u00eb. Een hotel vol je ne sais quoi Franse ouderwetsigheid. Dat geldt voor de kamers, maar ook voor de eetzaal vol zware Bourgondische eiken meubelen. In het restaurant een kaart met stevige kost uit de streek. Vermeldenswaardig is, dat op de kaart een pictogram van een pannetjes aangeeft of het &#8220;faite maison&#8221; is of juist niet. Dat vind ik charmant. De confit van eend of de assiette de saumon sla je over, maar de salade chanoine met Epoisses  (kanunnikensalade) en de boeuf Bourguignon dus niet. We dronken er bij afwezigheid van rood uit het nabije Mancey een pinot noir uit Givry bij.<\/p>\n\n\n\n<p><strong>Recept voor salade chanoine met Epoisses.<\/strong><\/p>\n\n\n\n<p>Nodig:<\/p>\n\n\n\n<p>8 dunne sneetjes peperkoek<\/p>\n\n\n\n<p>1 Epoisses in dunne plakken<\/p>\n\n\n\n<p>gemengde jonge sla, jeunes pousses<\/p>\n\n\n\n<p>gehakte zure augurkjes<\/p>\n\n\n\n<p>kerstomaatjes<\/p>\n\n\n\n<p>gekookte sperzieboontjes in stukjes<\/p>\n\n\n\n<p>peper &amp; zout<\/p>\n\n\n\n<p>olijfolie en rode wijnazijn.<\/p>\n\n\n\n<p>Bereiding:<\/p>\n\n\n\n<p>Rooster de sneetje peperkoek kort en beleg deze met de plakken Epoisses. Leg op een ovenplaat en laat de kaas kort smelten op 200 graden in de oven. Meng de salade ingredi\u00ebnten. Maak op smaak met wat olie, azijn, peper en zout.
