Ik vind het heerlijk om met de auto fraaie steden te bezoeken, wijnen te proeven en in te slaan, me te koesteren in de Mediterrane zon -se l\u00e9zarder, zoals Fransen, dat zo mooi noemen- of op het platteland te sudderen. Kleine verlaten dorpjes tussen de wijngaarden, akkers en velden voor zonnebloemen. Waar het angelus tweemaal daags slaat. Geautomatiseerd of handmatig. Winters in de mist van het dal. Het rokerige van de Bourgogne. La France profonde, de luiken dicht en het houtvuur aan. Over<a href=\"http:\/\/gereonskeukenthuis.nl\/blog\/lente-in-de-maconnais-gepocheerde-eieren-in-rode-wijnsaus\/\">\u00a0Lamartine<\/a>\u00a0en zijn eieren in rode wijnsaus, die Yvette van Boven gretig overnam in een paasnummer van Libelle. Of de avonturen van mijn sprookjesfiguren, die graag en route zijn. Van Pontarlier tot Saint Tropez! Elke keer beleven ze nieuwe dingen en proeven nieuwe smaken. Of\u00a0<a href=\"http:\/\/gereonskeukenthuis.nl\/blog\/chasseurs-de-mancey-karbonaadjes-op-jagerswijze\/\">Th\u00e9o<\/a>\u00a0die mee mocht met de jagers om in het voorjaar de aanwas van zwijnen te tellen.\u00a0<a href=\"http:\/\/gereonskeukenthuis.nl\/blog\/lotharingen\/\">Lotharingen<\/a>, de madeleines van Proust, de babas uit Nancy. Ik kan er over blijven vertellen. Ik ben namelijk verknocht aan de campagne. Dat is natuurlijk ook France profonde. Daarom geniet ik zo van de kookboeken van St\u00e9phane Reynaud. De lol vind ik van bezig zijn met het vleesdeeg dat je er elke variant van een terrine van kunt maken, die je wilt. Of door toevoeging van lever een pat\u00e9. De herfst komt eraan, dus ik zou zeggen handen uit de mouwen en kneden maar. Snijd de korstjes van het oude brood en week deze in een mengsel van room en eieren. \u00a0Voeg de tijm, chilipoeder. peper en zout toe aan het brood\/roommengsel. Doe het vlees en gehakt erbij en meng goed door elkaar. Week de gedroogde pruimen in de sherry. Snijd ze daarna in stukjes. Hak de walnoten (niet te) fijn. Meng de pruimen en walnoten door het vleesmengsel.<\/span><\/p>\n<p><span style=\"font-family: inherit;\">Bekleed een vorm of pat\u00e9schaal met de spek en laat deze iets over de rand hangen. Vul de vorm met het vleesmengsel en druk goed aan. Schud goed met de vorm om \u00a0luchtgaten in de terrine te voorkomen. Dek af met de spekplakken.<\/span><\/p>\n<p><span style=\"font-family: inherit;\">Verwarm de oven op 180 graden. Vul de grote ovenschaal met heet water. Zet daarin de terrine. Bak het geheel in 50 minuten gaar. Haal op het einde het overtollige vet van de terrine. Laat de terrine afkoelen. Serveer in dikke plakken met bijvoorbeeld wat gebakken appels.
