Dat ik de Griekse beginselen ben toegedaan, ook in mijn keuken, mag voor mijn lezers geen geheim (meer) zijn. In\u00a0<span id=\":dh.1\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Gereons<\/span>\u00a0Keuken Thuis wordt met grote regelmaat fancy Grieks eten gekookt. Met een twist zoals mijn Griekse <a href=\"https:\/\/www.youtube.com\/watch?v=rIdtv_y9RUc\">basissaus.<\/a> Het is geen Italiaanse\u00a0<span id=\":dh.2\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">rag\u00fa<\/span>. Maar een tomatensaus met veel groente, knoflook, een chili-pepertje en kaneel. Inderdaad kaneel, want dat geeft nu juist dat Griekse tintje aan deze saus. In het Byzantijnse Rijk was\u00a0<span id=\":dh.3\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Constantinopel<\/span>\u00a0een hub van specerijhandel. Later voortgezet door de\u00a0<span id=\":dh.4\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Venetianen<\/span>. Misschien dat er daarom kaneel in gaat. Er gaat echter geen basilicum in de Griekse basissaus, want dat wordt van oudsher niet gebruikt in de Helleense keuken. Tegenwoordig wel, maar dat is de invloed van de Italiaanse keuken. Mijn Griekse basissaus is ideaal voor in de<a href=\"http:\/\/gereonskeukenthuis.nl\/blog\/sneeuwjacht-tijd-voor-een-pastitsio\/\">\u00a0<span id=\":dh.5\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">pastitsio<\/span><\/a>,\u00a0moussaka of voor in de gevulde groenten met rijst. \u00a0Een ideale saus om in te vriezen of om te verwerken met feta in feestelijke pasteitjes voor bij de\u00a0<span id=\":dh.8\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">BBQ<\/span>. Mogelijkheden te over en hoe langer je de Griekse basissaus op het vuur laat staan hoe geuriger hij wordt. Meestal kom ik op het idee om deze saus te maken als ik daags ervoor naar mijn groenteman op de Ten\u00a0<span id=\":dh.9\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Katemarkt<\/span>\u00a0ben geweest. Ik kom dan terug met de basis voor mijn Griekse tomatensaus. Tomaten, selderij, wortel, paprika, uien, knoflook en verse kruiden. Bij de aanpalende slager haal ik wat gehakt, half of half of liever nog\u00a0<span id=\":dh.10\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">lamsgehakt<\/span>. Eenmaal thuis verwerk ik deze ingredi\u00ebnten tot de Griekse basissaus.<\/p>\n<p class=\"separator\" data-blogger-escaped-style=\"clear: both; text-align: center;\"><a href=\"https:\/\/i0.wp.com\/4.bp.blogspot.com\/-PbUZg7NiNmE\/WaAgKpbZFrI\/AAAAAAAAFA0\/NOmn6592HIwv6xf4nAcvPiHK--5X87qyACLcBGAs\/s1600\/pastitsio.jpg?ssl=1\" data-blogger-escaped-style=\"margin-left: 1em; margin-right: 1em;\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/4.bp.blogspot.com\/-PbUZg7NiNmE\/WaAgKpbZFrI\/AAAAAAAAFA0\/NOmn6592HIwv6xf4nAcvPiHK--5X87qyACLcBGAs\/s320\/pastitsio.jpg?resize=320%2C199&#038;ssl=1\" width=\"320\" height=\"199\" border=\"0\" data-blogger-escaped-data-original-height=\"486\" data-blogger-escaped-data-original-width=\"780\" \/><\/a>\u00a0foto:\u00a0<span id=\":dh.6\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">pastitsio<\/span>\u00a0in de zomer met een\u00a0<span id=\":dh.7\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">spinaziesalade.<\/span><\/p>\n<p>Nodig:<\/p>\n<p>500 g\u00a0<span id=\":dh.12\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">lams<\/span>&#8211; of half om\u00a0<span id=\":dh.13\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">halfgehakt<\/span><\/p>\n<p>2 rode uien<\/p>\n<p>1 grote rode paprika<\/p>\n<p>2 stengels bleekselderij<\/p>\n<p>3 wortels<\/p>\n<p>4 tenen knoflook<\/p>\n<p>1 blik tomatenblokjes<\/p>\n<p>4 grote tomaten<\/p>\n<p>1\/2 chili pepertje<\/p>\n<p>tijm geritst<\/p>\n<p>2 tl gedroogde oregano<\/p>\n<p>glas rode wijn<\/p>\n<p>3 tl kaneel<\/p>\n<p>zout en zwarte peper<\/p>\n<p>olijfolie<\/p>\n<p>Bereiding:<\/p>\n<p>Snipper de uien fijn, snijd alle groenten in blokjes, het pepertje in dunne ringetjes en hak de tenen knoflook fijn. Snijd de tomaten in kwarten.Verhit olie in een pan en bak het gehakt aan. Voeg als eerste de uien toe en bak ze kort mee. Voeg daarna de groenten, knoflook en het halve chili pepertje toe en bak deze kort mee. Doe de tomaten erbij. Blus af met de rode wijn en giet de tomatenblokjes uit blik\u00a0\u00a0in de pan. Voeg de tijm, oregano, kaneel, peper en zout toe.
