Of gewoon gegrild #alfresco met verkruimelde fetakaas. Een gerecht, bedacht door de Griekse chefkok Nikolaos Tselementes in zijn queeste om een pure nieuwe Griekse keuken te cre\u00ebren na de val van het Ottomaanse rijk. Een hartverwarmende ovenschotel, die vele varianten kent en bij mij elke keer anders uitpakt. Geeft niets, je huis gevuld met de geur van geroosterde aubergine, een hint kaneel, kaas en de licht zoete saus voor tussen de aardappel- en auberginelaagjes. Ik noem het warm eten met tevredenheid. Fruit de uien in wat olie. Voeg twee tenen knoflook toe. Bak daarna het gehakt mee. Voeg de kaneelpoeder, peper en zout toe. Blus het geheel af met de rode wijn. Voeg de tomatenblokjes toe. Laat kort sudderen. Vet een ovenschaal in en maak om en om lagen van rauwe aardappel, groente, peterselie en vleessaus. Maak een bechamelsaus. Verhit de melk. Smelt in een andere pan de boter, voeg de bloem toe en maak er een lichtbruine roux van. Giet langzaam de hete melk erbij en blijf roeren. Laat de saus iets inkoken en voeg nootmuskaat, peper en zout toe. Laat de saus afkoelen en voeg de gruy\u00e8re toe. Voeg wat melk toe als de saus te dik wordt. \u00a0Giet de bechamelsaus in de ovenschotel.
