Vandaag koos ik als halte de eerste. het land rond Lille, de Noordzeekust en Artesi\u00eb. Een bijzondere streek. Boven het vlakke land torenen de belforten, de spitsen van kathedralen uit. Ze lijken wel neergezet door reuzen in hun schaakspel. Net als de krijtrotsen van Cap gris &amp; blanc nez op de grens van Noordzee en Kanaal. Lille, Duinkerken, Arras en Sint Winoksbegen. Het Vlaamse land. Een streek met tradities, van processies, van Vlaamse reuzen en bier. Kermissen en grote reuzen in optochten. Pays des ch&#8217;tis. De film Bienvenue chez les ch&#8217;tis zette het Noorden voor eens en altijd op de kaart. Hartelijk en conviviaal.  Met moules frites. Grijze garnalen van de kust. Potjevleesch, kervelsoep en carbonade \u00e0 la flamande.  Halte Hauts de France. Uit Nord Pas de Calais vandaag een stoofgerecht van konijn met pruimen en bruin bier.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><a href=\"https:\/\/i0.wp.com\/1.bp.blogspot.com\/-a94dXQcLoLg\/XxFMZtNly8I\/AAAAAAAAKKs\/qZKWEAe9bwgkyj09NXH6mb_MDNWT6Ot7QCLcBGAsYHQ\/s596\/308.JPG?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/1.bp.blogspot.com\/-a94dXQcLoLg\/XxFMZtNly8I\/AAAAAAAAKKs\/qZKWEAe9bwgkyj09NXH6mb_MDNWT6Ot7QCLcBGAsYHQ\/s320\/308.JPG?w=525&#038;ssl=1\" alt=\"\"\/><\/a><figcaption>foto: belfort van Lille (Rijsel)<\/figcaption><\/figure>\n\n\n\n<p>Nodig:<\/p>\n\n\n\n<p>1 vet konijn in stukken<\/p>\n\n\n\n<p>250 g gedroogde pruimen<\/p>\n\n\n\n<p>2 rode uien<\/p>\n\n\n\n<p>1 fles\/ 70 cl bruin familiebier<\/p>\n\n\n\n<p>1\/2 potje zilveruitjes uitgelekt<\/p>\n\n\n\n<p>1 bouquet garni van tijm, rozemarijn en laurier<\/p>\n\n\n\n<p>boter<\/p>\n\n\n\n<p>2 plakken peperkoek<\/p>\n\n\n\n<p>1 el Dijon mosterd<\/p>\n\n\n\n<p>peper en zout<\/p>\n\n\n\n<p>Bereiding:<\/p>\n\n\n\n<p>Bestrooi de konijndelen met peper en zout. Verhit in een pan de boter en braad het vlees rondom aan. Pel de uien en snijd deze in ringen. Doe de uien bij het vlees en laat kort meebakken. Voeg het bruine bier en bouquet garni toe en laat het geheel een half uur sudderen. Besmeer de peperkoek met mosterd en leg deze in het vocht. Laat wederom een half uur sudderen. Voeg de pruimen en zilveruitjes toe en laat het geheel nogmaals 30 minuten sudderen. Verwijder het bouquet garni.
