Vandaag zou de Tour de France starten in Nice. Dat wordt twee maanden later op 29 augustus. Zo lang kon ik echter niet wachten, dus mijn culi Franse zomerweken gaan nu van start tot 1 augustus a.s. De stad aan de Baie des Anges is de aftrap. Denk ik aan Nice, denk ik aan een heel lekker soort streetfood: Socca!<\/p>\n\n\n\n<figure class=\"wp-block-image\"><a href=\"https:\/\/i0.wp.com\/1.bp.blogspot.com\/-lQuhmBRnexU\/XvRpAAFAbsI\/AAAAAAAAJ5A\/e8NP57gwmJcsQfoKTNBgm4Fbmr73NHF5ACK4BGAsYHg\/s976\/nice%2B06%2Boktober%2B%252830%2529.JPG?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/1.bp.blogspot.com\/-lQuhmBRnexU\/XvRpAAFAbsI\/AAAAAAAAJ5A\/e8NP57gwmJcsQfoKTNBgm4Fbmr73NHF5ACK4BGAsYHg\/s320\/nice%2B06%2Boktober%2B%252830%2529.JPG?w=525&#038;ssl=1\" alt=\"\"\/><\/a><\/figure>\n\n\n\n<p><strong>Socca <\/strong>op deze lekker warme zaterdag. Deze&nbsp; makkelijke pannenkoek van kikkererwtenmeel \u00e0 la Ni\u00e7oise. In het Italiaans farinata geheten. (Overigens kenden de Romeinen ook al brood van kikkererwtenmeel) In Vieux Nice zie je socca overal in verschillende varianten. Belegd of onbelegd. Glutenvrij, dat zeker, maar daar gaat het mij niet om. Ik donder ze gewoon op de BBQ. Of maak er een wrap mee met dat restje Proven\u00e7aalse kip. Flinke dot aioli erbij. Socca, ook&nbsp;<a aria-label=\"undefined (opent in een nieuwe tab)\" href=\"http:\/\/gereonskeukenthuis.nl\/blog\/nina-saint-tropez\/\" target=\"_blank\" rel=\"noreferrer noopener\">Nina Parker<\/a>&nbsp;uit St. Tropez heeft het in haar boek staan. Met allerlei smaakjes. Ik gebruik gewoon allen wat zout en een dosis komijn door het beslag. Een paradijs vol geuren en kleuren. Net als al die spannende specerijen, die je socca smaak geven. Ik grill de socca soms na op mijn buiten BBQ, beleg ze met wat rauwe groente, Zoals gezegd met een extra dot aioli. Een glas frisse ros\u00e9 erbij en je komt de canicules, hondsdagen van juli wel door. Sant\u00e9!  Een prima d\u00e9part van de Franse zomerweken. <strong>Socca \u00e0 la Ni\u00e7oise.<\/strong><\/p>\n\n\n\n<p><br>Nodig (10 stuks):<\/p>\n\n\n\n<p>300 g kikkererwtenmeel<br>2 tl zout<br>3 tl ras al hanout of 3 tl komijnpoeder<br>500 ml water<br>olie om in te bakken<\/p>\n\n\n\n<p>Bereiding:<\/p>\n\n\n\n<p>Doe het meel, het zout en de ras al hanout of komijnpoeder in een kom en voeg beetje bij beetje het lauwe water toe. Maak er een mooi beslag van. Zet het beslag zeker 2 uur in de ijskast. Er kunnen klontjes in ontstaan, maar die verdwijnen tijdens de rusttijd.<br>Verhit wat olie in een koekenpan en doe een schep beslag in de hete olie. Bak de socca om en om en zet apart onder folie. Eet direct op of laat afkoelen.
