De ap\u00e9ro is een belangrijk onderdeel van het dagelijkse r\u00e9gime in Gereons Keuken Thuis. Ook aan zee. Dat verandert niet na de verhuizing. En dan is het lekker dippen bij je glas ros\u00e9 van deze pittige pesto, gemaakt van radijsloof, dat je normaliter afknipt en weg mikt. De schrijvers van Zero Waste vinden het een heerlijk hapje voor brunch of aperitief. Een no waste idee, om eindeloos mee te vari\u00ebren. De voorgestelde foodpairing is een bubbel van het Belgische domein\u00a0<a href=\"http:\/\/www.ruffus.be\/agaises-wijngaard\/\">Les Agaises<\/a>, de Ruffus ultra brut. Giet olijfolie in een blender, voeg het loof, de ricotta, de pistachenoten, de teen knoflook en citroensap toe. Mix enkel seconden tot een homogene massa, maar niet zo lang, dat de pesto geen textuur meer heeft.
