Ik hakte altijd grote hoeveelheden peren in de pot met rode wijnsiroop. Ook is het leuk om voor elke gast een kort verhaal of sprookje te schrijven. En het gebruik van specerijen. Iets waar wij Hollanders patent op hebben. Vandaag een ouderwets stukje vlees, de doorregen speklap. Met een bitterzoete jus van abrikozen en een beetje sinaasappel. Erbij serveer ik een stamppot van spruitjes en en snufje nootmuskaat. Erbij Extra Stout bier van de Jopen brouwerij uit Haarlem. Bittertje bij het zoet.<\/p>\n\n\n\n<p>Nodig 4 personen:<\/p>\n\n\n\n<p>500 g speklapjes<\/p>\n\n\n\n<p>150 g gedroogde abrikozen<\/p>\n\n\n\n<p>1 glas medium sherry<\/p>\n\n\n\n<p>2 kruidnagels<\/p>\n\n\n\n<p>1 tl kaneel<\/p>\n\n\n\n<p>rasp van sinaasappel<\/p>\n\n\n\n<p>peper en zout<\/p>\n\n\n\n<p>boter<\/p>\n\n\n\n<p>1 kg aardappels<\/p>\n\n\n\n<p>500 g spruitjes<\/p>\n\n\n\n<p>1\/2 dl warme melk<\/p>\n\n\n\n<p>nootmuskaat<\/p>\n\n\n\n<p>Bereiding:<\/p>\n\n\n\n<p>Wrijf de speklapjes in met peper, zout en wat kaneel. Verhit de boter en braad de lapjes aan. Snijd de gedroogde abrikozen in kleine stukjes en laat even wellen in de sherry. Haal de speklapjes uit de pan en blus de jus met wat water. Voeg de abrikozen, sherry, kruidnagel en sinaasappelerasp toe en laat even sudderen. Doe de speklapjes terug in de pan. Voeg eventueel nog wat boter toe.<\/p>\n\n\n\n<p>Schoon de spruitjes en snijd ze doormidden. Blancheer ze kort in heet water. Kook de aardappels. Als deze gaar zijn, voeg dan wat boter en warme melk toe en maak er een puree van. Voeg een snuifje nootmuskaat toe. Meng de puree met de spruitjes en maak een stamppotje.
