Deze gastblogger is geen onbekende op Gereons Keuken Thuis. Eerder zond Thomas al een recept in voor heerlijk herfstig stoofvlees met bokbier in de serie\u00a0<a href=\"http:\/\/gereonskeukenthuis.nl\/blog\/thomas-culinair-twee-gastblogger\/\">mannelijke foodbloggers vertellen<\/a>\u00a0en toen wij onlangs contact hadden in het kader van de Franse zomerweken verblijdde hij mij direct met een recept voor longhaas. Onglet! In Frankrijk een gewoon stukkie vlees. In Nederland wat minder bekend, maar daarom niet minder bemind. Ik kijk mijn ogen altijd uit bij grote vleeswinkels zoals\u00a0<a href=\"http:\/\/www.carnivor.fr\/\">Carnivor<\/a>, die je overal in Frankrijk vindt. Ze hebben daar allerlei delen van het rund, waarvan wij nog nooit hebben gehoord. Met gebakken uien of sjalotjes, au sauce marchand de vin, pepersaus of sauce roquefort. In Parijse restaurants staat longhaas, of onglet al jaren op de kaart. Dit vlees moet rijpen om lekker mals en sappig te worden. De longhaas laat de longen bewegen en is de middenrifspier van het rund. Het is een relatief onbekend, maar een erg smaakvol stuk rundvlees. Smeer de longhaas in met olijfolie en strooi er vervolgens wat peper en zout op.<\/span><span style=\"font-family: inherit;\" data-blogger-escaped-style=\"font-family: inherit;\">Leg de longhaas in de pan en bak de longhaas rondom in enkele minuten mooi bruin. Doe er op het laatst een klontje boter bij en laat even meebakken.\u00a0<\/span><span style=\"font-family: inherit;\" data-blogger-escaped-style=\"font-family: inherit;\">Haal de gebakken longhaas daarna uit de pan en laat zo\u2019n 10 minuten rusten onder aluminiumfolie. Maak ondertussen onderstaande sjalottensaus in het bakvocht van de longhaas.<\/span><span style=\"font-family: inherit;\" data-blogger-escaped-style=\"font-family: inherit;\">Snijd de gebakken longhaas voor het serveren in mooie schuine plakjes.<\/span><span style=\"font-family: inherit;\" data-blogger-escaped-style=\"font-family: inherit;\">Snijd de sjalotten in halve ringen en doe in de pan. Bak even aan tot ze wat kleur krijgen. Blus ze vervolgens af met een flinke scheut rode wijn en voeg daarna een laurierblaadje toe. Roer goed door en laat de\u00a0sjalottensaus nog zo\u2019n 10 minuten inkoken. Schenk bij het opdienen wat van de sjalottensaus over de gebakken longhaas.<\/span><\/p>\n<\/div>\n<div data-blogger-escaped-style=\"background-color: white; font-size: 14px; margin-bottom: 10px; padding: 0px;\">\n<p><span style=\"font-family: inherit;\" data-blogger-escaped-style=\"font-family: inherit;\">Snijd de gebakken longhaas in mooie dunne plakjes en leg ze dakpansgewijs op het bord. Schenk er wat van de sjalottensaus over en maak het af door wat kiemgroente over te strooien. Natuurlijk kun je ook peterselie gebruiken.
