In 2015 maakte ik een<a href=\"http:\/\/gereonskeukenthuis.nl\/blog\/funky-pastasalade\/\"> funky<\/a> versie en vorig jaar ging ik voor <a href=\"http:\/\/gereonskeukenthuis.nl\/blog\/pastasalade-met-pit\/\">Portugese pit<\/a>. Dit jaar ga ik voor een pastasalade met de Franse slag. Het zijn tenslotte de #Franse #zomerweken op mijn blog. Ik wist echter niet of den Fransman ook pastasalades maakt en eet. Eigenlijk heb ik er nooit zo op gelet in de hypermarch\u00e9s. Tja, ik kocht vaak Pi\u00ebmontaise, tabouleh of een rijstsalade. Maar pastasalade kwam niet in mij op. Misschien bedacht ik, dat het een echte Nederlandse uitvinding was? Want wij zijn dol op kliederen met kliekjes. En wat blijkt? Na een tocht over de dreven van het wereldwijde r\u00e9seau: Fransen zien de pastasalade als een goede methode om te besparen en voor restverwerking. En ze vari\u00ebren er eindeloos mee. Een idee was geboren voor deze dag van de pastasalade. Een basissalade van volkoren penne met een stukje terroir. Het werd uiteindelijk een half warme pastasalade, van volkoren penne, sinaasappel, noten, een dressing van rode wijnazijn en notenolie en snel gegrilde eendenborst, sur un lit de m\u00e2che (op een bedje van veldsla). We drinken er een licht gekoelde gamay uit de Loire bij. \u00a0Een rode zomerwijn van Domaine <a href=\"https:\/\/www.valdeloire-france.com\/organiser\/activites\/vins-et-vignobles\/domaine-pierre-guindon\">Pierre Guindon<\/a> uit Anc\u00e9nis. Verhit een grillpan en bak de huid krokant. Draai daarna om en bak de eendenborst ros\u00e9. Haal hem uit de pan en leg weg onder aluminiumfolie. Grill de dunne plakken sinaasappel met schil om en om en leg apart. Voeg twee eetlepels rode wijnazijn toe aan \u00a0het vrijgekomen vet in de grillpan en laat kort deglaceren.<\/p>\n<p>Meng in een kom de penne met 3 el notenolie, 2 el rode wijnazijn, gegrilde sinaasappel (met of zonder schilletje), peterselie en de gehakte hazelnoten. Maak op smaak met zwarte peper en zout.\u00a0Leg op elk bord een handje veldsla, schep hierop de penne en maakt het af met vers gesneden, nog warme, eendenborst.
