Dat het goed toeven was op de hellingen van de machtige Vesuvius en aan de azuurblauwe wateren van <span id=\":dl.2\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Capri<\/span> en <span id=\":dl.3\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Ischia<\/span> wisten de keizers en <span id=\":dl.4\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">nobilitas<\/span> van Rome al voor onze jaartelling. <span id=\":dl.5\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Campania<\/span> Felix was een geliefd vakantieoord om de volle stad Rome in de zomer te ontvluchten. Er waren villa&#8217;s, er was vruchtbare grond, lokale wijn en verse vis uit de <span id=\":dl.6\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Thyrreense<\/span> Zee. Zo was het en zo is het gebleven. <span id=\":dl.7\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Campania<\/span>, de streek rond koninklijke stad Napels, een geliefd oord voor jonge schrijvers op hun &#8220;<span id=\":dl.8\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Sehnsucht<\/span>&#8221; tours in de achttiende eeuw. Eerst Napels zien en dan sterven. Zo&#8217;n mooi schilderij troffen Goethe en consorten aan. En nog steeds vormen Napels en de <span id=\":dl.9\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Amalfikust<\/span> een mooi decor voor de geneugten des levens. Eten is daar \u00e9\u00e9n van. het nieuwste deel uit de reeks De Zilveren Lepel neemt je mee op pad langs al het lekkers, dat de provincies <span id=\":dl.10\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Napoli<\/span>, <span id=\":dl.11\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Caserta<\/span>, <span id=\":dl.12\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Salerno<\/span>, <span id=\":dl.13\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Avellino<\/span> en <span id=\":dl.14\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Benevento<\/span> je hebben te bieden. Vruchtbare vulkanische bodem, mooie vergezichten, knalgele citroenen uit <span id=\":dl.15\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Sorrento<\/span>, de bekende mozzarella van buffelmelk en de enige echte pizza <span id=\":dl.16\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Napoletana<\/span>. Onder de rook van de vulkaan. Grieken, Byzantijnen, Spanjaarden en Fransen deden een duit in het culinaire zakje van deze zinderende stad. De eerder genoemde pizza <span id=\":dl.17\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Napoletana<\/span>, de oer-pastasaus salsa <span id=\":dl.18\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Genovese<\/span>, een timbaal van <span id=\":dl.19\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">rigatoni<\/span> (bekend geworden door <span id=\":dl.20\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">chefkok<\/span> Don Alfonso als een <span id=\":dl.21\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Vesuvio<\/span> van <span id=\":dl.22\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">rigatoni<\/span>), de gefrituurde pizza, de <span id=\":dl.23\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">sart\u00f9<\/span> <span id=\":dl.24\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">di<\/span> <span id=\":dl.25\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">riso<\/span>, een adellijk gerecht uit de Franse keukens van de Bourbons, dat ik ooit nog ga assembleren en Baba au <span id=\":dl.26\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">rhum<\/span>. Napels is van alle smaken thuis. Ook met onvergetelijke koffie!<\/p>\n<p>We verlaten de stad en gaan de streek rond koninklijke stad <span id=\":dl.27\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Caserta<\/span> aan de voet van de Apennijnen in. Een stad van ambachtslieden. De streek is de bakermat van de mozzarella da <span id=\":dl.28\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">buffala<\/span>, artisjokken en wild. De mozzarella doet het uitstekend in een <span id=\":dl.29\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">caprese<\/span>. Lasagne van artisjokken, gestoofd varkensvlees van <span id=\":dl.30\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Casertano<\/span> varken. Kastanjesoep, <span id=\":dl.38\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">colatura<\/span> <span id=\":dl.39\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">di<\/span> <span id=\":dl.40\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">alici<\/span> of een heuse citroensalade. De zomerse sfeer spat ervan af. De maaltijd sluit je af met een glaasje homemade <span id=\":dl.41\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">limoncello<\/span>.<\/p>\n<p>We gaan weer het binnenland in naar de steden <span id=\":dl.42\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Avellino<\/span> en <span id=\":dl.43\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Benevento<\/span>, de laatstgenoemde liggend in een groene vallei, die van oudsher diende als vestingstad van de Romeinen. Overal zijn hiervan nog de sporen te vinden. <span id=\":dl.44\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Avellino<\/span> ligt ook in een groene streek, met als bijnaam &#8220;het groene <span id=\":dl.45\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Irpinia<\/span>&#8220;. <span id=\":dl.46\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">Avellino<\/span> is een populaire vakantiebestemming. De keukens van beide streken zijn ge\u00ebnt op <span id=\":dl.47\" class=\"goog-spellcheck-word\" tabindex=\"-1\" role=\"menuitem\" aria-haspopup=\"true\">lams<\/span>&#8211; en varkensvlees. Er is sinds de oudheid veel landbouw. Ook vind je nog steeds Griekse invloeden in het dagelijkse menu.
