Gelegen in het groene hart van Itali\u00eb, Umbri\u00eb, het iets minder bekende zusje van Toscane, met haar heuvels, het Trasimeense meer, de chocolade van Perugia, vleeswaren van Norcia, de \u00a0de rode wijnen van Montefalco, saffraan en natuurlijk truffels. In dit heerlijke vakantiegebied \u00a0in de plaats Montegiove (berg van Jupiter) runt Adje Middelbeek haar B&amp;B, of moet ik het agriturismo noemen. Ze schreef er onlangs een column over op <a href=\"http:\/\/franska.nl\/2394-2\">franska.nl<\/a> Behalve heerlijk verblijven is het tijdens haar najaars wine- en foodreis van 22 t\/m 28 oktober ook smikkelen en smullen op de Podere. De nazomers zijn prachtig in de Umbrische heuvels. Met alle geuren en kleuren van de nakende herfst. Oogsttijd van olijven, truffeljacht, paddenstoelen rapen en saffraan plukken. Op de dag van aankomst bij Podere del Buongustaio gaan we direct naar de Zafferiamo, het saffraanfeest in Citta della Pieve. hier wordt een grote saffraanmarkt gehouden. Daarna gaan we een stukje eten, een pizza met truffel en paddenstoelen bij La Tana del Gufo in Monteleone d&#8217;Orvieto. De volgende dag is het tijd om een saffraanlaboratorium te bezoeken, waar alle ins en outs worden verteld over deze gele draadjes. we gaan proeven en een gele risotto \u00a0koken. Tijdens de wine- en foodreis gaan we ook op truffeljacht en brengen we een bezoek aan Moretti, Voglie di Bosco, een winkel in streekproducten. Gereons Keuken thuis maakte al eens kennis met hun producten tijdens de Bella Vita beurs in de RAI. Zelfs good old George Clooney is fan van de truffelproducten. (What else?) Het heerlijke nazomerweer, het verzamelen van en kennis maken met alle mooie streekproducten, koken onder leiding van Joop Zwiep en elke avond #alfresco eten en genieten van het uitzicht over het dal. We drinken er een boterige, houtgelagerde chardonnay bij.<\/span><\/p>\n<div data-blogger-escaped-style=\"color: black;\"><\/div>\n<div data-blogger-escaped-style=\"color: black;\">\n<p>Nodig:<\/p>\n<\/div>\n<div data-blogger-escaped-style=\"color: black;\"><\/div>\n<div data-blogger-escaped-style=\"color: black;\">\n<p>300 g Arborio rijst<\/p>\n<\/div>\n<div data-blogger-escaped-style=\"color: black;\">\n<p>1 \u00bd\u00a0liter kippenbouillon<\/p>\n<\/div>\n<div data-blogger-escaped-style=\"color: black;\">\n<p>1 glas witte wijn<\/p>\n<\/div>\n<div data-blogger-escaped-style=\"color: black;\">\n<p>1 tl saffraandraadjes opgelost in bouillon<\/p>\n<\/div>\n<div data-blogger-escaped-style=\"color: black;\">\n<p>2 sjalotjes<\/p>\n<\/div>\n<div data-blogger-escaped-style=\"color: black;\">\n<p>100 g boter<\/p>\n<\/div>\n<div data-blogger-escaped-style=\"color: black;\">\n<p>75 g Parmezaanse kaas (optioneel)<\/p>\n<\/div>\n<div data-blogger-escaped-style=\"color: black;\">\n<p>peper en zout<\/p>\n<\/div>\n<div data-blogger-escaped-style=\"color: black;\"><\/div>\n<div data-blogger-escaped-style=\"color: black;\">\n<p>Bereiding:<\/p>\n<\/div>\n<div data-blogger-escaped-style=\"color: black;\"><\/div>\n<div data-blogger-escaped-style=\"color: black;\">\n<p>Snipper de sjalotjes fijn. Smelt de helft van de boter in een pan. Fruit de sjalotjes aan. Voeg de rijst toe en laat licht kleuren. Blus af met de \u00a0witte wijn. \u00a0Zet in een kommetje de saffraan draadjes met een beetje bouillon apart. Voeg nu beetje bij beetje de warme kippenbouillon toe en roer goed. Ongeveer na tien minuten kan de opgeloste saffraan worden toegevoegd. Ga daarna verder met het bouillon in de pan scheppen en roeren totdat de rijst alle vocht heeft op genomen. Na 20 minuten is de rijst beetgaar, voeg de rest van de boter en Parmezaanse kaas toe. Maak op smaak met peper en zout.
