Vandaag begint Gereons Keuken Thuis het #alfresco seizoen, een zomer lang lekker buiten koken, bakken, grillen en natuurlijk eten en drinken. De nieuwste loot aan de stam is een heuse Seafood Boil, maar daarover later meer. Al fresco genieten op mijn Amsterdamse balkon, waar ik elk jaar tracht een paradijsje vol bloeiende bloemen en blakende groente te maken. Mijn eigen Hof van Eden. Het zonnetje komt door vandaag. Mijn handen jeuken, de uitgebloeide bollen eruit, nieuwe zaailingen aanplanten, de grill naar buiten. Al dan niet niet in mijn adamskostuum, want het is vandaag World Naked Gardening Day. Kan ik dat mijn buren wel aandoen? In ieder geval ga ik dipping al fresco, of dat skinny wordt gedaan? Dat kan ik niet zeggen, maar deze dips zijn een heerlijk voorgerecht op deze zaterdag. Een mooie manier om je dagelijkse portie van 250 gram groente binnen te krijgen.<\/p>\n<p>Nodig:<\/p>\n<p>voor de dips;<\/p>\n<p>2 potten kikkererwten<\/p>\n<p>1 beker Griekse yoghurt<\/p>\n<p>2 rode bieten<\/p>\n<p>1\/2 komkommer<\/p>\n<p>knoflook<\/p>\n<p>komijnpoeder<\/p>\n<p>chilipoeder<\/p>\n<p>2 citroenen<\/p>\n<p>olijfolie<\/p>\n<p>bosje peterselie<\/p>\n<p>dille<\/p>\n<p>zout en peper<\/p>\n<p>voor de groenteschotel:<\/p>\n<p>1 gele paprika<\/p>\n<p>1 rode paprika<\/p>\n<p>2 wortels<\/p>\n<p>1\/2 bloemkool<\/p>\n<p>4 stengels bleekselderij<\/p>\n<p>bosje radijs<\/p>\n<p>1 komkommer<\/p>\n<p>Bereiding:<\/p>\n<p>Was de groenten, schil ze indien nodig en snijd ze in mooie repen. Haal bij de komkommer de zaadlijsten eruit. Was de radijs en verwijder het blad. (later nog te gebruiken voor een romig soepje). Maak roosjes van de bloemkool. Leg alles in een mooie kleurige waaier op een grote schaal of hipsterplank. Laat de kikkererwten uitlekken. Voor de groene hummus pureer je 1 pot kikkererwten 3 tenen knoflook, 2 tl komijnpoeder, 1 tl chilipoeder, sap van een citroen, olijfolie, een bos peterselie en zout met de staafmixer tot een gladde groene dip.<\/p>\n<p>Voor de knalroze hummus pureer je 2 rode bieten, een pot kikkererwten, 2 tl komijnpoeder, 2 tenen knoflook, sap van een citroen, olijfolie. peper en zout tot een mooie homogene massa.\u00a0Snijd voor de tzatziki een komkommer in fijne reepjes en zet de reepjes in een zeef \u00a0met zout erover gestrooid apart. Meng de uitgelekte komkommer met de yoghurt, 2 uitgeperste tenen knoflook, dille, zwarte peper en wat olijfolie door elkaar.
