Voor bij een chocolat moelleux. Een vin doux naturel zoals de Fransen het noemen. Deze dessertwijn uit de Roussillon\u00a0wordt gemaakt van de grenache noir druif. Tijdens de gisting van de most wordt wijnalcohol toegevoegd. De alcoholische gisting stopt en suikers blijven behouden. Daarna gaan deze wijnen rusten op bolle\u00a0glazen flessen, die buiten staan.\u00a0Misschien een verklaring voor het grote aantal wespen dat ik in Banyuls trof, toen ik daar eens in oktober was. Maar dat terzijde. Dit geeft de Banyuls de kenmerkende smaak.<br \/>\nDeze wijn wordt ook wel de partner van chocola genoemd. Vandaag, in het licht van\u00a0de Ladur\u00e9e blog eerder deze week een recept voor een chocolat moelleux dessert.<\/p>\n<p>Nodig voor 4 personen:<\/p>\n<p>2 grote eieren<br \/>\n25 g suiker<br \/>\nsnufje zout<br \/>\n100 g pure chocolade<br \/>\n100 g boter<br \/>\n30 g bloem<\/p>\n<p>4 ramequins (ronde ovenschaaltjes)<br \/>\nboter om in te vetten<br \/>\nbloem om te bestuiven<br \/>\npoedersuiker ter decoratie<\/p>\n<p>Bereiding:<\/p>\n<p>Verwarm de oven voor\u00a0op 200 graden. Eieren met de suiker schuimig kloppen. Meng de bloem en het snufje zout er doorheen. Boter en chocolade samen au bain marie smelten. Eiermengsel toevoegen en alles glad roeren. Ramequins invetten en met bloem bestuiven. mengsel over bakjes verdelen. De ramequins 12 minuten in de oven bakken en beslist niet langer. De ramequins op bordjes omkeren en bestrooien met poedersuiker.
