Kleurrijk en fantasievol eten uit Peru. Geuren en smaken verenigd. Al millennia lang. Van de kust van de Stille Oceaan, in de straten van Lima, in het hooggebergte van de Andes en de wouden van de Amazone. Dat is de rijke keuken van Peru. De Inca&#8217;s aten al quinoa, physalis (goudbes) en een vorm van de emblematische ceviche. Grootmoeders in de bergen hielden cavia&#8217;s in hun keuken. De conquistadores brachten knoflook, citrusvruchten en gember mee. De Afrikanen hun voedsel, zoals de spiesjes van runderhart. Veel gegeten streetfood in Lima. De Italianen kwamen met pasta en wijn. De Chinese arbeiders leerden Peru wokken. En de Japanners vervolmaakten de bereidingen van vis in de Peruaanse keuken. Ik kan er nog heel veel meer over vertellen.<\/p>\n<p>Maar nog beter kun je Martin Morales, veelzijdige man, laten praten over zijn passie. De keuken van zijn geboorteland. En praten kan hij over food. Niet vreemd als je bedenkt, dat de vorige carri\u00e8re van deze man in de entertainment business lag. Maar zijn Peruaanse bloed kroop waar het niet gaan kon. Al sinds zijn elfde. Hij startte een restaurant met de klassieker van dit mooie land.\u00a0<b>Ceviche<\/b>. In dit restaurant kookt Martin Morales puur soulfood, natuurlijk gebruik makend van de rijkdommen van Peru.<\/p>\n<p>We nemen een kijkje op pagina 53 van dit boek. Op deze bladzijde staat en recept voor Cancha, gebakken mais. Dit is een heel populaire snack uit de Andes, maar hij wordt overal in Peru gegeten. De maiskorrels hebben een nootachtige smaak, zijn ongelofelijk crunchy en zeer verslavend.<\/p>\n<p>Nodig:<\/p>\n<p>1 el plantaardige olie<\/p>\n<p>250 g maiz chulpe (speciaal bewerkte pofmais, zie sabordelperu.nl)<\/p>\n<p>1 tl zout<\/p>\n<p>een kneepje limoensap (naar keuze)<\/p>\n<p>Bereiding:<\/p>\n<p>Verhit de plantaardige olie in een koekenpan met deksel op halfhoog vuur. Voeg de maiskorrels toe en bak ze terwijl je de pan af en toe schudt tot ze openspringen. Zet het deksel op de pan, draai het vuur laag en bak ze nog circa 5 minuten. Schud de pan regelmatig tot de korrels een diepe goudbruine kleur hebben en hier en daar een beetje verschroeid zijn.<\/p>\n<p>Stort de maiskorrels in een kom, bestrooi ze met zout en laat ze afkoelen. De maiskorrels zijn in een luchtdichte trommel minstens een paar weken houdbaar.
