Het is internationale week van de sherry. Mondiaal vinden vele evenementen plaats rond deze wijn uit het zuidwesten van Andalusi\u00eb. In de streek rond <span id=\":do.6\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Jerez<\/span> de la <span id=\":do.7\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Frontera<\/span> worden de <span id=\":do.8\" class=\"goog-spellcheck-word\" tabindex=\"-1\">palomino<\/span> en Pedro <span id=\":do.9\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Xim\u00e9nez<\/span> druif verbouwd. Van deze druiven worden versterkte wijnen gemaakt vari\u00ebrend van zilt en beendroog tot <span id=\":do.11\" class=\"goog-spellcheck-word\" tabindex=\"-1\">knijterzoet<\/span>. Dit heeft alles te maken met welke atmosfeer er heerst in de <span id=\":do.12\" class=\"goog-spellcheck-word\" tabindex=\"-1\">bodega&#8217;s<\/span>. Flor ( een soort schimmel) zorgt ervoor dat sherry het predicaat <span id=\":do.13\" class=\"goog-spellcheck-word\" tabindex=\"-1\">fino<\/span> krijgt, beendroog en zelfs zilt als het om een <span id=\":do.14\" class=\"goog-spellcheck-word\" tabindex=\"-1\">manzanilla<\/span> gaat. Heerlijk bij mijn <a href=\"http:\/\/gereonskeukenthuis.nl\/blog\/foodblogevent-juni-gazpacho-helado-con-gambas-picantes\/\">gazpacho <span id=\":do.15\" class=\"goog-spellcheck-word\" tabindex=\"-1\">helado<\/span> con <span id=\":do.16\" class=\"goog-spellcheck-word\" tabindex=\"-1\">gambas<\/span> <span id=\":do.17\" class=\"goog-spellcheck-word\" tabindex=\"-1\">picantes<\/span><\/a>\u00a0De wijnen die niet gevoelig zijn voor flor worden <span id=\":do.18\" class=\"goog-spellcheck-word\" tabindex=\"-1\">oloroso<\/span> genoemd en hebben een hoger suiker gehalte. Dat is de basis van de <span id=\":do.19\" class=\"goog-spellcheck-word\" tabindex=\"-1\">PX<\/span>.<\/p>\n<p>Naast de natuurlijke omstandigheden hebben de keldermeesters ook wat werk te doen. Sherry is altijd een <span id=\":do.20\" class=\"goog-spellcheck-word\" tabindex=\"-1\">blend<\/span> van verschillende jaren. Dit krijgt zijn beslag in het zogenaamde <span id=\":do.21\" class=\"goog-spellcheck-word\" tabindex=\"-1\">solera<\/span> systeem. Dit bestaat uit drie lagen tonnen, waarin de sherry rijpt. In de onderste zit de oudere wijn, in de bovenste de nieuwe oogst. Hiervan wordt elk jaar een <span id=\":do.22\" class=\"goog-spellcheck-word\" tabindex=\"-1\">blend<\/span> gemaakt.<\/p>\n<p class=\"separator\"><a href=\"https:\/\/i0.wp.com\/3.bp.blogspot.com\/-z5qnyAR5yRg\/WCBJpKiBcgI\/AAAAAAAAEDw\/hdD3udgOcbAYGGaWQ1gpecU4rV_rRD9xQCLcB\/s1600\/12341412_798028520323048_708283203201447881_n.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/3.bp.blogspot.com\/-z5qnyAR5yRg\/WCBJpKiBcgI\/AAAAAAAAEDw\/hdD3udgOcbAYGGaWQ1gpecU4rV_rRD9xQCLcB\/s1600\/12341412_798028520323048_708283203201447881_n.jpg?w=525&#038;ssl=1\" border=\"0\" \/><\/a>\u00a0foto: <span id=\":do.23\" class=\"goog-spellcheck-word\" tabindex=\"-1\">PX<\/span> <span id=\":do.24\" class=\"goog-spellcheck-word\" tabindex=\"-1\">solera<\/span> 1941.<\/p>\n<p>Ik dronk eens bij Josephine en Paul Spaan \u00a0een <span id=\":do.25\" class=\"goog-spellcheck-word\" tabindex=\"-1\">PX<\/span> sherry, waarvan de <span id=\":do.26\" class=\"goog-spellcheck-word\" tabindex=\"-1\">solera<\/span> gestart was in 1941. Bijzonder, <span id=\":do.27\" class=\"goog-spellcheck-word\" tabindex=\"-1\">gemaderiseerd<\/span> en zoet. Een sherry voor bij het, door Paul vervaardigde, funky dessert van een warme custard met kokos, bramen, popcorn en roomijs.<\/p>\n<p>Maar nu voldoende theorie. Het gaat om de <span id=\":do.28\" class=\"goog-spellcheck-word\" tabindex=\"-1\">PX<\/span> sherry. Mijn eerste kennismaking met deze heerlijke stroperige traktatie was bij de Bokkendoorns in Overveen ( zal zo&#8217;n 15 jaar geleden zijn). Als afsluiting van de maaltijd werd een simpel doch doeltreffend dessert van ananas en hele donkere chocolade geserveerd. Ik heb deze drie-eenheid van smaken altijd onthouden. Een recept kon ik niet een, twee, drie meer vinden. Maar waar een wil is, is een weg.<\/p>\n<p>Voor bij \u00a0de <span id=\":do.29\" class=\"goog-spellcheck-word\" tabindex=\"-1\">PX<\/span> in deze internationale sherry week bedacht ik geroosterde ananas mat amandelen, donkere chocola en een vleug chilipeper. Spannende smaken uit de nieuwe wereld voor bij een wijn uit de oude&#8230;.<\/p>\n<p>Laat ik het een <b><span id=\":do.30\" class=\"goog-spellcheck-word\" tabindex=\"-1\">pintxo<\/span> de <span id=\":do.31\" class=\"goog-spellcheck-word\" tabindex=\"-1\">pi\u00f1a<\/span> con salsa de <span id=\":do.32\" class=\"goog-spellcheck-word\" tabindex=\"-1\">chocolate<\/span> <span id=\":do.33\" class=\"goog-spellcheck-word\" tabindex=\"-1\">pic\u00f3n<\/span><\/b>, een geroosterd <span id=\":do.34\" class=\"goog-spellcheck-word\" tabindex=\"-1\">ananasspiesje<\/span> met een pittige chocoladesaus, noemen. Voor bij de <span id=\":do.35\" class=\"goog-spellcheck-word\" tabindex=\"-1\">PX<\/span> sherry, <span id=\":do.36\" class=\"goog-spellcheck-word\" tabindex=\"-1\">un<\/span> <span id=\":do.37\" class=\"goog-spellcheck-word\" tabindex=\"-1\">vino<\/span> de <span id=\":do.38\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Jerez<\/span>.\u00a0\u00a1Disfrutalo!<\/p>\n<p>Nodig:<\/p>\n<p>1 ananas in blokjes<\/p>\n<p>2 el amandelschaafsel licht <span id=\":do.39\" class=\"goog-spellcheck-word\" tabindex=\"-1\">geroosterd<\/span><\/p>\n<p>150 donkere pure chocola (72%)<\/p>\n<p>1 tl chilipoeder<\/p>\n<p>2 el rietsuiker<\/p>\n<p>Bereiding:<\/p>\n<p>Snijd de ananas in blokjes en rijg de stukjes aan <span id=\":do.40\" class=\"goog-spellcheck-word\" tabindex=\"-1\">sat\u00e9prikkers<\/span>. Rol de spiesjes door de rietsuiker en gril ze direct in een hete grillpan. Laat de ananas en suiker iets <span id=\":do.41\" class=\"goog-spellcheck-word\" tabindex=\"-1\">karamelliseren<\/span>. Smelt de chocolade au <span id=\":do.42\" class=\"goog-spellcheck-word\" tabindex=\"-1\">bain<\/span> <span id=\":do.43\" class=\"goog-spellcheck-word\" tabindex=\"-1\">marie<\/span> en voeg naar smaak de chilipoeder toe. Indien de chocolade te dik blijft kun je wat warme lepels water toevoegen. Serveer deze <span id=\":do.44\" class=\"goog-spellcheck-word\" tabindex=\"-1\">pintxos<\/span> direct met een beetje chocoladesaus.
