Het is zaterdag, de laatste dag van de Scandinavische week. Twee weken geleden ging Gereons Keuken en Route naar de visafslag van <a href=\"http:\/\/gereonskeukenthuis.nl\/blog\/gone-fishing\/\">IJmuiden <\/a>voor de presentatie van <a href=\"http:\/\/gereonskeukenthuis.nl\/blog\/mikkel-karstad-gone-fishing\/\">Gone Fishing<\/a>, het nieuwe kookboek van Mikkel Karstad. De kok\/schrijver maakte live enkele visgerechten klaar uit zijn mooie onderkoelde boek. Vol smaak en Scandinavische accenten.<\/p>\n<p>Want wij doen niet zoveel met bessen. De voor het kookboek van het jaar 2016 genomineerde Mikkel Karstad wel. Bessen voor in de pannenkoeken, maar ook gefermenteerd voor bij de vis. Zoute zwarte bessen. Ik ga het eens een keer proberen, alhoewel ik nog wel bij de schrijver ga navragen of er niet een doek op de pot moet. (tegen vliegjes en ander kruipend spul)<\/p>\n<p>Op deze zonnige zaterdag @Gereons SeaSpot een recept uit Gone Fishing. Gegrilde makreelfilet met biet en bessen. Echt Nordisk Mad. ter afsluiting van de Scandinavische week. We drinken er een frisse sauvignon blanc uit Nieuw Zeeland bij.<\/p>\n<p class=\"separator\"><a href=\"https:\/\/i0.wp.com\/4.bp.blogspot.com\/-MlG8vY8K0MI\/WAsX9TuZFiI\/AAAAAAAAEBk\/RXsK54S4C_8FIcmdLxuDDQorxRoXlkCegCLcB\/s1600\/14520423_554584791408893_1997664342416224124_n.jpg?ssl=1\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/4.bp.blogspot.com\/-MlG8vY8K0MI\/WAsX9TuZFiI\/AAAAAAAAEBk\/RXsK54S4C_8FIcmdLxuDDQorxRoXlkCegCLcB\/s320\/14520423_554584791408893_1997664342416224124_n.jpg?resize=202%2C320&#038;ssl=1\" width=\"202\" height=\"320\" border=\"0\" \/><\/a>\u00a0foto: makreel met biet en bes.<\/p>\n<p>Nodig:<\/p>\n<p>2 hele makrelen of 4 filets<\/p>\n<p>100 ml olijfolie<\/p>\n<p>zout<\/p>\n<p>10 takjes tijm<\/p>\n<p>4 verse chioggiabietjes<\/p>\n<p>200 ml gezouten zwarte bessen<\/p>\n<p>zeezout en versgemalen peper<\/p>\n<p>500 g zwarte bessen (vers of diepvries)<\/p>\n<p>10 g zout<\/p>\n<p>Bereiding:<\/p>\n<p>Let erop dat de makrelen kakelvers zijn. (vraag de visboer ze zo nodig te fileren, al zullen de meeste dat al gedaan hebben) Marineer de filets 10 minuten in een beetje olijfolie met wat zout en tijm voor je ze gaat grillen.<\/p>\n<p>Maak de chioggiabietjes schoon, snij ze in dunne plakjes met een mandoline en leg ze in een kom koud water. Meng in een andere schaal de gezoute zwarte bessen met wat van hun vocht en de olijfolie.<\/p>\n<p>Gril de makreelfilets ongeveer 2 minuten op de huidzijde op een hete grill of in een grillpan, todat de huid krokant en goudbruin is. Keer de filets en gril ze nog 30 seconden, tot ze gaar zijn maar nog sappig vanbinnen.<\/p>\n<p>Haal de filets van de grill of uit de grillpan en dien ze direct op met de plakjes chioggiabiet en zwarte bessen dressing. Strooi er wat tijm en zeezout over.<\/p>\n<p><strong>Gezouten zwarte bessen.<\/strong><\/p>\n<p>Doe de zwarte bessen en zout in een inmaakpot en roer goed. Laat de bessen zonder deksel op de pot 4-5 dagen op het aanrecht staan, tot ze gaan gisten.Roer de bessen elke dag even om, maar laat ze verder met rust.<\/p>\n<p>Doe na 5 dagen het deksel op de bot en zet de zwarte bessen in de ijskast of op een koele plek.
