Bouillon in de vriezer van de kippenbotten, van dat onlangs afgekloven Label Rouge kippetje, een potje zongedroogde tomaatjes, wat restgroente in de ijskast. Wortel, selderij, wat verdwaalde champignons, een bosje groene wat slappe asperges. Een restje witte wijn. Een klont boter en een restje kaas. En een pot arborio rijst. Het lijkt potverdorie de schijf van vijf wel in een instock jasje gegoten. Het risotto op zondag festijn kan beginnen. Lekker roeren in de pan, goed voor de spierballen. Instant exercise en wat zen tegelijk. Maar nu dwaal ik af. Risotto op zondag, easy, #nowaste en het tovert vrolijke gezichten aan tafel. Ik zou zeggen wees een creatief en bouw een risotto met wat er in de ijskast ligt. Op deze mooie zondag schenk ik een koele chardonnay van Kellerei Kaltern uit Alto Adige.<\/p>\n<p><strong><em>Risotto alla primavera<\/em><\/strong><\/p>\n<p>Nodig 4 personen:<\/p>\n<p>400 g arborio rijst<br \/>\n1 l kippenbouillon, getrokken van de afsnijdsels en botten<br \/>\n1 bundeltje groene asperges of andere (groene) groente<br \/>\n2 stengels bleekselderij<br \/>\n1 wortel<br \/>\nroomboter en kaas<br \/>\n2 sjalotjes<br \/>\npeterselie gehakt<br \/>\npeper en zout<br \/>\n1 glas witte wijn<br \/>\n3 el olijfolie<\/p>\n<p>handje rucola en kaas voor de garnering<\/p>\n<p>Bereiding:<\/p>\n<p>Snijd de harde onderkanten van de groene asperges. Kook de asperges 3 minuten en laat ze afkoelen. Snijd de wortel in kleine blokjes en de stengels selderij in ringetjes. Snipper de sjalotjes fijn. Verhit in een pan de olie en fruit de sjalot. Bak de groente kort mee, Voeg alle afsnijdsels toe aan de bouillon. Voeg de rijst toe en bak deze mee totdat de rijst kleurt. Blus af met de witte wijn. Voeg beetje bij beetje de warme bouillon toe en blijf roeren totdat de rijst alles opneemt. Blijf de rijst tussentijd roeren. Na twintig minuten is de rijst klaar. Roer de aspergestukjes door de risotto (of een andere groene groente) Maak de risotto af met wat boter, peterselie, peper en zout.
