Gereons Keuken Thuis toog op deze warme maandag in mei naar het ROC aan de Elandsstraat, alwaar tien jonge koks onder leiding van Theo Rensch aan de slag gingen met Open Blue Cobia. Een nieuwe gekweekte vissoort uit de azuurblauwe Cara\u00efbische wateren bij Panama. Een ferm beestje te zien aan het exemplaar, dat op ijs bij de mise en place lag. gekweekt in grote kooien 12 kilometer buiten de kust van Panama, met een constante zeewatertemperatuur. Het andere witte vlees. Stevig vlees met een vetpercentage. Nadat ze eerst aan land \u00a0negen maanden aan wal worden opgekweekt, worden de vissen \u00a0in water van 70 meter diep uitgezet in kooien van 30 bij 30 meter. Daar groeit het dier in een veilige en gezonde omgeving met veel ruimte op.<\/p>\n<p><a href=\"http:\/\/news.nationalgeographic.com\/news\/special-features\/2014\/04\/140430-other-white-meat-fish-aquaculture-cobia\/\">Open Blue Cobia<\/a> was niet eerder in Nederland te verkrijgen, maar daar heeft de kwekerij in samenwerking met<a href=\"http:\/\/frischeparadies.de\/\"> Frische Paradies<\/a>, een Duitse versmarkt wat op gevonden. Zij leveren sinds kort aan de betere horeca in Nederland met een grote versgarantie. Overigens zijn de vestigingen van Frische Paradies ook te bezoeken door consumenten. Na het zien van dit <a href=\"https:\/\/www.youtube.com\/watch?v=K4zfwX5SypA\">filmpje<\/a>\u00a0wil Gereons Keuken Thuis hier zekers eens een kijkje gaan nemen. Bezield gingen de jonge koks in spe aan de slag met ceviche, poke, een big green egg gerecht, Japanse grill, smoren, een spiesje, sashimi of gewoon op de huid gebakken. Ze hadden zich op velerlei wijze laten inspireren door deze vis. Mooie staaltjes van opgemaakte borden en even belangrijk een parade van heerlijke smaken met \u00e9\u00e9n soort vis. Op de fiets door Oud West was Gereons Keuken er nog niet uit wat hij met deze moot meegekregen vis gaat doen. Gelukkig is het #alfresco seizoen in volle gang.
