Mijn grootmoeders deden het, ik doe het vaak in <span id=\":11.4\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Gereons<\/span> Keuken Thuis. Koken met wat je in huis hebt, in de ijskast ligt of geconserveerd hebt. Koken met wat er in stock is. Dat kan verbluffende resultaten opleveren en draagt bij aan het niet verspillen van voedsel.<\/p>\n<p>Want dat zagen de oprichters van In stock met lede ogen aan. <span id=\":11.5\" class=\"goog-spellcheck-word\" tabindex=\"-1\">E\u00e9n<\/span> derde van het voedsel wat geproduceerd wordt belandt in de vuilnisemmer. En van dat derde deel neemt de consument 42% voor zijn rekening. Zonde zou ik zeggen. Want met dat overgebleven stuk komkommer, die iets minder hagelwitte bloemkool en dat restje vlees kan je nog heel wat maken. Of inmaken.<\/p>\n<p>Dat is het streven van Bart Roetert, Merel Laarman, Selma <span id=\":11.6\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Seddik<\/span> en Freke van <span id=\":11.7\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Nimwegen<\/span>. Verweesd voedsel hergebruiken. En in hun restaurant <span id=\":11.8\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Instock<\/span> maakt chef Lucas <span id=\":11.9\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Jeffries<\/span> er heerlijke combinaties mee. En nu is er het kookboek, gedrukt op gerecycled steengruis.Stevig en het kan nat worden.Hoe gaat In stock <span id=\":11.10\" class=\"goog-spellcheck-word\" tabindex=\"-1\">cooking<\/span> in zijn werk? Het gaat terug naar de basis. Met de drie R&#8217;s van <span id=\":11.11\" class=\"goog-spellcheck-word\" tabindex=\"-1\">reduce<\/span>, recycle <span id=\":11.12\" class=\"goog-spellcheck-word\" tabindex=\"-1\">and<\/span> <span id=\":11.13\" class=\"goog-spellcheck-word\" tabindex=\"-1\">re<\/span>&#8211;<span id=\":11.14\" class=\"goog-spellcheck-word\" tabindex=\"-1\">use<\/span>. Of te wel koop minder, hergebruik en recycle dingen. Ik deed het onlangs nog met \u00e9\u00e9n label rouge kip. Die leverde mij behalve een avondmaal op zaterdag, een ragout op zondag, nog een aardige batch, nu ingevroren, bouillon van de botten op. Handig om weer soep van te maken. Eigenlijk is het gewoon zo simpel.<\/p>\n<p>Dat is er nu het idee van het In stock <span id=\":11.15\" class=\"goog-spellcheck-word\" tabindex=\"-1\">cooking<\/span> boek. Voor koks, die bewust aan de slag willen met dit principe. Met tips over conserveren van voedsel. Inmaken, zoet en zuur, pickles voor bij je borrel of <span id=\":11.16\" class=\"goog-spellcheck-word\" tabindex=\"-1\">wijnconfit<\/span> van Yvette van Boven. Groente, bloemzuurkool van Pepijn <span id=\":11.19\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Schmeink<\/span>, die eerder de wereld verblijdde met home made kruiden van bijvoorbeeld klokhuis van appel. Er is zoveel mogelijk.Drogen van kruiden, van tomaten en het maken van groentepoeders. Die komt op de agenda in mijn keuken.<\/p>\n<p>Ook de vriezer komt aan bod. Een bekende conserveringstechniek. Ik herinner mij de vreugde van mijn oma toe de vrieskist zijn intrede deed. Bakken aardbeien verdwenen erin. Maar wat te denken van avocado- of \u00a0bananenijs? De eerste kan je met een mooi Frans woord <span id=\":11.20\" class=\"goog-spellcheck-word\" tabindex=\"-1\">onctueux<\/span> noemen. <span id=\":11.21\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Creamy<\/span>.Pekelen is ook zo een beproefde methode. <span id=\":11.22\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Brandade<\/span> de <span id=\":11.23\" class=\"goog-spellcheck-word\" tabindex=\"-1\">morue<\/span> uit <span id=\":11.24\" class=\"goog-spellcheck-word\" tabindex=\"-1\">N\u00eemes<\/span>, een bijdrage van worstmaker Samuel Levie. Of Marokkaanse gezouten citroenen. Konfijten in vet. Een beproefde methode. Eendenbout, vis <span id=\":11.26\" class=\"goog-spellcheck-word\" tabindex=\"-1\">confit<\/span> of rillettes.\u00a0De laatste methode is natuurlijk roken.
