Een hele boerenkip drie keer gebruiken. <strong>#nowaste<\/strong> \u00a0Zaterdag kocht ik een Franse label rouge kip. Altijd lekker om die in de oven te braden met wat aardappels, knoflook en Proven\u00e7aalse kruiden. Meestal houd ik na zo&#8217;n feestmaal het karkas, een borstfilet en kippenbout over. Precies voldoende voor de volgende stap in het proces. Je zet het karkas met koud water op het vuur en laat het dan uren lang trekken, totdat je een stevige kippenbouillon hebt. Nu stond de zaterdag toch in het teken van bouillon trekken, want ik deed het zelfde met runderkluiven voor de groentesoep. Enfin daarover later meer. Laat de bouillon &#8217;s nachts afkoelen. Dat kon gezien de &#8220;heerlijke&#8221; voorjaarstemperaturen prima op mijn Amsterdamse balkon. De volgende dag heb je dan een prima basis voor een ragout. Haal het karkas eruit, pluk de laatste restjes vlees eraf, schep het vet eraf en zeef de bouillon. Assembleren maar. Zo gebruik je \u00e9\u00e9n boerenkip drie maal. De rest van de bouillon vroor Gereons Keuken Thuis in voor risotto of een ander gerecht. We drinken een straffe trappist bij de ragout. Breng aan de kook en laat circa 3 uur op laag vuur trekken. Haal de bouten eruit en pluk het vlees eraf. Zeef de bouillon. Zet apart. Borstel de champignons schoon en bak deze kort aan in weinig olie. Hak het teentje knoflook fijn en doe deze bij de champignons. Verhit de boter in een pan en voeg de bloem toe, bak deze tot er een klont ontstaat. Blijven roeren! Voeg beetje bij beetje de bouillon toe en klop met een garde tot gladde saus. Dit is precisiewerk waar je bij moet blijven. Voeg de stukjes kip en champignons toe en warm ze even mee. Roer als laatste de peterselie door de ragout. Maak op smaak met zout en peper en een snuifje nootmuskaat.
