Beter gezegd een boek <b>Over Rot<\/b>. Na\u00a0<a href=\"http:\/\/gereonskeukenthuis.nl\/blog\/rook-het-handboek-voor-warm-koud-roken\/\">Over Rook<\/a>, dat mij verleidde om weer eens te gaan roken (geen tabak), is er nu een boek dat mij gaat leren fermenteren. Het spelen met microben om aan voedsel een extra dimensie te geven. Meneer <span id=\":14.3\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Wateetons<\/span>, vorser par <span id=\":14.4\" class=\"goog-spellcheck-word\" tabindex=\"-1\">excellence<\/span>, schreef een handboek voor fermenteren. Een soort scheikundedoos in boekvorm. Want fermenteren is makkelijk thuis te doen. Geheel in de trant van zijn eerdere boeken schuwt hij het experiment niet. \u00a0Hij bouwt een oude ijskast om tot fermentatiekast. Laat zien hoe je met weinig middelen vlees, vis, groenten, zuivel, brood en bonen kunt laten rotten. Geeft uitleg over de theorie, schoon werken en de verschillende methoden. Daarna kun je aan de slag. Met zuren, bacteri\u00ebn en yoghurtbloempjes. Een soort Micropia in je keuken of garage. Startculturen en de werking van kruiden. Ge\u00efllustreerd met tabellen en tekeningen.Over Rot is een boek waar je even voor moet gaan zitten. Meer dan 300 pagina&#8217;s over allerlei processen. Het is geen kookboek. Het hoofdstuk groenten start met uitleg van <span id=\":14.7\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Oos<\/span> <span id=\":14.8\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Kesbeke<\/span>, de Amsterdamse tafelzuurmaker. Wat melkzuur en zout doen met je augurken of andere groenten. Een ander fermentatieproces is het maken van dranken, bier, wijn of sake. Een meer en meer voorkomende <span id=\":14.10\" class=\"goog-spellcheck-word\" tabindex=\"-1\">hipsterbezigheid<\/span>. Meneer <span id=\":14.11\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Wateetons<\/span> vertelt er alles over. Ben benieuwd wanneer <span id=\":14.12\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Gereons eerste<\/span> biertjes van de band rollen. Ga in ieder geval beugelflessen verzamelen.<\/p>\n<p>Over Rot besteedt ook veel aandacht aan vlees, vis en eieren. Hoe je zelf vleeswaar maakt of <span id=\":14.13\" class=\"goog-spellcheck-word\" tabindex=\"-1\">trassie<\/span>. En zelf kaas maken ontbreekt ook niet. Door Over Rot te lezen kom je erachter dat ons leven vol gefermenteerd voedsel is. Zo had ik het nog nooit bekeken, maar logisch vind ik het wel. Het is een mooie methode om je voedsel te conserveren en extra smaak te geven. Na het in de pot hakken van peren wellicht een nieuwe uitdaging in dit nieuwe jaar.<\/p>\n<p>Over Rot is wederom zo&#8217;n typisch jongensboek (ook voor meisjes), waarin Meneer <span id=\":14.14\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Wateetons<\/span> laat zien hoe leuk en spannend het is om processen te doorgronden en er zelf mee aan de slag te gaan. Dat deed hij in Over Rook en doet hij nu weer in Over Rot. Dit boek nodigt uit om direct aan de slag te gaan. Met simpele middelen.
