Hij tikt regelmatig een Dry Martini weg. Shaken not stirred. Zo langzamerhand verovert vermout weer een plekje in de grootstedelijke bars van Londen en Barcelona. Een comeback. Maar wat is vermout nu precies, hoe wordt het gemaakt en hoe drink je het?<\/p>\n<p>Isabel Boons, culinair journaliste schreef samen met vermoutexpert Ilse Duponcheel een boek over deze drank. Vermout, de complete gids.<\/p>\n<p>Het boek behandelt de geschiedenis, de bereiding, de druivensoorten en kruiden voor vermout. Welke soorten en waar komt vermout vandaan? Allemaal leuke onderwerpen over een drankje dat vergeten leek. Maar niet voor lang meer. De schrijvers vertellen zelfs hoe thuis zelf vermout te maken.<\/p>\n<p>Het boek gaat in op wereldwijde merken. Van de klassieke Italiaanse en Franse merken tot vermouts uit Californi\u00eb. Het boek geeft tips hoe vermout te drinken en recepten voor cocktails, zoals de Americano en daar is ie weer, de klassieke Dry Martini.<\/p>\n<p>Er is aandacht voor koken met vermout. Nu gebruik ik al regelmatig Noilly Prat uit Marseillan in de keuken. Maar food en vermout vormt een mooi stel. Het boek sluit af met adressen van hippe vermuterias. Zeker een bezoek waard.<\/p>\n<p>Vermout de complete gids is een vrolijk boek over alle in en outs van dit aperitief. Maar vermout kan ook heel goed in de keuken. Bij de mosselen in onderstaand recept. We drinken er een droge vermout bij.<\/p>\n<p>Nodig:<\/p>\n<p>4 kg mosselen<\/p>\n<p>2 el gesnipperde ui<\/p>\n<p>bieslook<\/p>\n<p>3 el boter<\/p>\n<p>125 ml witte wijn<\/p>\n<p>45 ml droge vermout<\/p>\n<p>250 ml room<\/p>\n<p>peper en zout<\/p>\n<p>Bereiding:<\/p>\n<p>Maak de mosselen schoon en doe ze in een hoge pan, samen met de ui, bieslook, witte wijn en peper.<\/p>\n<p>Doe het deksel op de pan en breng aan de kook. Haal de mosselen uit de pan als ze gaar zijn en zeef de bouillon. Breng de bouillon aan de kook met de vermout, room, peper en zout. Laat 3 \u00e0 4 minuten op een hoog vuur koken. Voeg hierna de mosselen en nog wat bieslook toe.
