En dan ook nog eens voor vintage kookboeken, die ik her en der oppik. Zoals dit werk van Brigitte Tilleray, dat ik vond in de kringloopwinkel. Spekkie voor mijn bekkie. Het heet de Traditionele Franse keuken en staat vol landelijke recepten. Opgetekend uit de monden van boerinnen en huisvrouwen. Op Corsica, in de Ardennen, de Sud Ouest en Vogezen. Stevige kost, veel wild. Ach eigenlijk staat er van alles in uit de grote provisiekast, die men Frankrijk noemt. Tilleray beschrijft alle recepten heel beeldend. Je waant je bij wijze van spreken gewoon in dat Bourgondische klooster of op die alpenwei. En dat maakt het koken uit dit soort werken een feest. Zoals het onderstaande recept. Pasta met groene saus, les inhocs. Provencaalse pasta, om zelf thuis te maken. Een van origine boerenrecept. \u00a0De schrijfster gebruikt eendeneieren, ik kippenei. Serveer les inhocs met sauce verte van grand m\u00e8re Chaix. We drinken rode bio C\u00f4tes du Rh\u00f4ne bij van Domaine de Castan.<\/p>\n<p>Nodig:<\/p>\n<p>500 g bloem<\/p>\n<p>2 eieren<\/p>\n<p>2 el olijfolie<\/p>\n<p>3 el lauw water<\/p>\n<p>zout en zwarte peper<\/p>\n<p>gemalen Gruy\u00e8re<\/p>\n<p>voor de saus van grand m\u00e8re Chaix:<\/p>\n<p>handvol gehakte peterselie, 2 blaadjes munt fijngehakt, 2 tenen knoflook gehakt, 2 tl grof zeezout, 3 el geuerige olijfolie en 3 el kookwater van de pasta.<\/p>\n<p>Bereiding:<\/p>\n<p>Zeef de bloem in een grote kom en druk er een kuiltje in. Klop de eieren, de olie en water door elkaar en geit in het kuiltje. Meng alles goed door elkaar tot er een stevig deeg ontstaat. \u00a0Bestrooi het werkblad met wat bloem en rol de pasta dun uit. Laat de pasta 30 minuten drogen en rol deze op en snijd in dunne linten. Kook de pasta enkele minuten in ruim kokend water. Als de pasta al dente is meng deze dan met de saus van \u00a0kruiden, olie en wat lepels kookvocht.
