Een licht gerecht van venkel en kabeljauw. De frisse <span id=\":11.3\" class=\"goog-spellcheck-word\" tabindex=\"-1\">anijsachtige<\/span> smaak van de groente, die je aan de Zuid Franse ook overal in het wild vindt langs de kust. Ik pluk dan regelmatig wat takken af en wrijf het in mijn handen. Je ruikt direct anijs. Overigens tref je behalve venkel ook selderij, tijm en rozemarijn op je <span id=\":11.4\" class=\"goog-spellcheck-word\" tabindex=\"-1\">sentier<\/span> <span id=\":11.5\" class=\"goog-spellcheck-word\" tabindex=\"-1\">littoral<\/span>, je pad langs de kust. Langs de wegen in de heuvels achter Saint <span id=\":11.6\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Tropez<\/span>. Waar het kalme leven gewoon doorgaat. De tuinders in <span id=\":11.7\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Cogolin<\/span>, de groei van de druiven voor de ros\u00e9 uit <span id=\":11.8\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Gassin<\/span>. Daarin ligt volgens mij de aantrekkingskracht van dit schiereiland. Het glamoureuze van de kust, de flaneurs in de haven. De petanque spelende bewoners op de <span id=\":11.9\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Place<\/span> des <span id=\":11.10\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Lices<\/span>. En het rurale achterland van het <span id=\":11.11\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Massif<\/span> des <span id=\":11.12\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Maures, met zijn spectaculaire uitzichten.<\/span>\u00a0Voor ieder wat wils. En elke dag wat anders.<\/p>\n<p>Saint <span id=\":11.13\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Tropez<\/span>\u00a0<span id=\":11.14\" class=\"goog-spellcheck-word\" tabindex=\"-1\">cooking #alfresco<\/span>\u00a0vandaag met kabeljauwpakketjes. Uit de oven met venkel en een <span id=\":11.15\" class=\"goog-spellcheck-word\" tabindex=\"-1\">dash<\/span> ingemaakte citroen. Fris en licht. Net als de ros\u00e9 van <span id=\":11.16\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Ch\u00e2teau<\/span> <span id=\":11.17\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Minuty<\/span>, de <span id=\":11.18\" class=\"goog-spellcheck-word\" tabindex=\"-1\">cuv\u00e9e<\/span> <span id=\":11.19\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Bailly<\/span>. <span id=\":11.20\" class=\"goog-spellcheck-word\" tabindex=\"-1\">Bleekroze<\/span> en fris na je tocht over het schiereiland.<\/p>\n<p>Nodig:<\/p>\n<p>3 venkelknollen.<\/p>\n<p>2 tenen knoflook<\/p>\n<p>1 grote ui<\/p>\n<p>2 gekonfijte citroenen<\/p>\n<p>3 el olie<\/p>\n<p>4 kabeljauwmoten van 150 g<\/p>\n<p>zout en peper<\/p>\n<p>klontje boter<\/p>\n<p>Bereiding:<\/p>\n<p>Snijd de achterkant van de venkel en het groen eraf. Snijd de venkel in twee\u00ebn en haal de harde kern eruit. Hak in fijne reepjes daarna. Snipper de ui fijn en hak de knoflook fijn. Snijd de gekonfijte citroenen in kleine blokjes. Verhit wat olie in een \u00a0pan en fruit de ui en knoflook zachtjes aan. Voeg de venkel en citroen toe en bak deze kort mee. Voeg wat water toe en laat het geheel met een deksel op de pan ongeveer 20 minuten smoren. Verwarm de oven voor op 180 graden. Leg 4 vellen op maat geknipt bakpapier klaar op een ovenschaal. Leg hierop de kabeljauwmoten en bestrooi deze met wat zout en peper. Schep op de vis een flinke schep van het venkelmengsel. Leg op elke vismoot een klein klontje boter en bind de pakketjes dicht met <span id=\":11.22\" class=\"goog-spellcheck-word\" tabindex=\"-1\">keukentouw<\/span>.
