Ook in de Bourgogne. Van die roosterkarren zoals ik ze noem. Met kippen aan het spit of ham. Onder in de kar liggen de aardappels te roosteren in het vet dat uit het vlees druipt. De Bourgondische markten zijn geen straf. Het water loopt je uit mond als je langs alle kramen vol heerlijke, vaak zelf geproduceerde producten loopt. Seizoensgroenten, verse geitenkaasjes uit de M\u00e2connais, mooie tomaten, honing, wijn, noem het maar op. Ik kan de verleiding dan ook niet weerstaan om met een flinke plak ham huiswaarts te keren. Verse krieltjes erbij en klaar! En dan overgoten met een heerlijke rode wijn saus. Ik begrijp wel waarom de oude Galli\u00ebrs zo dol op zwijntjes waren. De wijn voor het koken en drinken is een rode Ch\u00e9nas van domaine Trichard.<\/p>\n<p>Nodig 4 personen:<\/p>\n<p>4 dikke plakken beenham<br \/>\n2 dl bouillon (evt. blokje)<br \/>\n1 el bloem<br \/>\n2 el tomatenpuree<br \/>\n2 tenen knoflook<br \/>\n2 dl rode wijn<br \/>\nboter<br \/>\nolijfolie<br \/>\nfijngehakte peterselie<br \/>\nzout en peper<br \/>\n750 g krieltjes<\/p>\n<p>Bereiding:<\/p>\n<p>Smelt de boter in een pan, voeg de bloem toe en laat heel kort bakken. Blijf roeren. Voeg beetje bij beetje de bouillon toe en laat al roerend de roux indikken. Pers de tenen knoflook door de roux.\u00a0Voeg de wijn en rest van bouillon toe. Roer de tomaten puree erdoor en laat nog even zachtjes pruttelen.<br \/>\nKook de krieltjes in hun schilletje gaar. Verhit in een koekenpan de olie en wat boter. Haal de plakken ham door wat bloem en bak de ham kort. Serveer de gebakken ham op schaal met saus erover.
