Was de groene paprika en snijd deze in dunne reepjes. Hak de knoflook fijn. Snijd de rode uien in ringen. Hak de peterselie grof. Meng alles met wat olijfolie en rode wijnazijn in een kom door elkaar. Leg de serranoham op bakpapier in de oven. Laat op 180 graden knapperig worden. Controleer tussendoor of de ham niet verbrandt. Verhit wat olie in een pan en bak hierin de plakjes chorizo knapperig. Schep de chorizo op wat keuken papier. Giet het overtollige vet af. Bewaar wat bakvet om de blokjes brood kort in aan te bakken. Meng de gebakken chorizo door de salade. Verdeel de tomatensalade over vier borden. Voeg eventueel nog wat zout en peper toe.
