Het strand is leeg en verfrist op deze dinsdagmiddag. Hoe anders dan het mudvolle Pinksterstrand. Het felle juni zonlicht prikt door de flarden vocht en wolk. Aan de horizon liggen de schepen voor de rede. Klaar om geschut te worden in de sluizen van IJmuiden. Op weg naar Amsterdam. Een solitaire Prindle zeiler waagt het erop. Hij steekt van wal of moet ik zeggen van strand. Ik volg het gekleurde zeil dat lijkt op te lossen in het vocht boven de Noordzee.<\/p>\n<div style=\"color: #000000;\">\n<p>In ieder geval kunnen we weer als fresco eten. Buiten koken zal het niet worden, simpelweg omdat mijn zeebalkonnetje zich hiervoor niet leent. Maar niet getreurd in Gereons Keuken aan Zee is het ook goed toeven. Ik maak een simpele garnalensoep en door toevoeging van wat lecithine maak ik er een mooie toef zeeschuim op. Een echte cappucino van zeevruchten.<\/p>\n<\/div>\n<div style=\"color: #000000;\">\n<p>We drinken er een frisse witte Beaujolais bij of gaan we eens voor de ros\u00e9 van domaine la Rizoli\u00e8re.<\/p>\n<\/div>\n<div style=\"color: #000000;\">\n<p>&nbsp;<\/p>\n<\/div>\n<div style=\"color: #000000;\">\n<p>Nodig:<\/p>\n<\/div>\n<div style=\"color: #000000;\">\n<p>&nbsp;<\/p>\n<\/div>\n<div style=\"color: #000000;\">\n<p>1 kg rauwe tijgergarnalen<\/p>\n<\/div>\n<div style=\"color: #000000;\">\n<p>1 blik gepelde tomaten<\/p>\n<\/div>\n<div style=\"color: #000000;\">\n<p>1 visbouillonblokje<\/p>\n<\/div>\n<div style=\"color: #000000;\">\n<p>250 ml room<\/p>\n<\/div>\n<div style=\"color: #000000;\">\n<p>1 1\/2 \u00a0liter water<\/p>\n<\/div>\n<div style=\"color: #000000;\">\n<p>2 cm gember<\/p>\n<\/div>\n<div style=\"color: #000000;\">\n<p>1 tl cayennepeper<\/p>\n<\/div>\n<div style=\"color: #000000;\">\n<p>olijfolie<\/p>\n<\/div>\n<div style=\"color: #000000;\">\n<p>2 el lecithine<\/p>\n<\/div>\n<div style=\"color: #000000;\">\n<p>zout en peper<\/p>\n<\/div>\n<div style=\"color: #000000;\">\n<p>4 takjes dille<\/p>\n<\/div>\n<div style=\"color: #000000;\">\n<p>&nbsp;<\/p>\n<\/div>\n<div style=\"color: #000000;\">\n<p>&nbsp;<\/p>\n<\/div>\n<div style=\"color: #000000;\">\n<p>Bereiding:<\/p>\n<\/div>\n<div style=\"color: #000000;\">\n<p>&nbsp;<\/p>\n<\/div>\n<div style=\"color: #000000;\">\n<p>Maak de rauwe garnalen schoon en bewaar de resten. Verhit in een pan het water en gooi hierin de garnaalresten. Voeg wat zout en een bouillonblokje toe en laat een half uur trekken. Verhit de olie en bak de garnalen kort aan. Haal 4 garnalen eruit voor garnering later. Voeg de gember in stukjes toe, de cayennepeper en het blik gepelde gepelde tomaten. Blus het geheel af met de gezeefde bouillon. Laat het geheel 15 minuten doorkoken. Proef de soep en maak hem eventueel op smaak met peper en zout \u00a0Voeg als laatste de room toe. Pureer de soep hierna met de staafmixer. Haal voor het opdienen 200 ml uit de pan en voeg de lecithine toe. Maak met de staafmixer op een rustige stand een schuim er van die boven op de soep wordt gelepeld.
