Snel zal de zon verdwijnen achter de bergen. De sneeuw van vorig weekend is gesmolten. Het laatste licht is diffuus op de hoge pieken van het eiland. De sterrenwacht is goed te zien. Het diner laat nog een uurtje of wat op zich wachten. Dus even een kleine ca\u00f1a (biertje) en een ceviche van zalm met avocadomousse. Makkelijk en snel te maken en koel te serveren.<\/p>\n<p>Nodig 4 personen:<\/p>\n<p>500 g zalmfilet in blokjes<\/p>\n<p>4 sjalotjes<\/p>\n<p>1 rode paprika<\/p>\n<p>1 tl gemberpoeder<\/p>\n<p>1 tl piment\u00f3n de la Vera<\/p>\n<p>sap van 2 limoenen<\/p>\n<p>5 el olijfolie<\/p>\n<p>1\/2 glas witte sauvignon blanc<\/p>\n<p>zout en peper<\/p>\n<p>2 el gehakte koriander<\/p>\n<p>1 tl gedroogde dille<\/p>\n<p>2 el gehakte bieslook<\/p>\n<p>2 avocado&#8217;s<\/p>\n<p>2 dl\u00a0yoghurt<\/p>\n<p>zwarte peper<\/p>\n<p>Bereiding:<\/p>\n<p>Beng in en pan wat water aan de kook. Snijd de zalm in blokjes. Pocheer de zalm 5 minuten. Haal de vis uit het water en laat in een kom afkoelen. Snijd de sjalotjes fijn, de paprika in kleien blokjes. Maak een marinade van de wijn limoensap, piment\u00f3n, gemberpoeder, olie en wijn. Voeg de zalm. sjalot en paprika toe en zet het geheel minimaal een uur in de ijskast.<\/p>\n<p>Schil en pel de avocado&#8217;s. Doe de stukjes in een kom samen met wat olie, zout, yoghurt, koriander en dille. haal er een staafmixer door en voeg de fijngehakte bieslook toe. eventueel nog wat zout en peper en een drupje limoen sap.<\/p>\n<p>Serveer de ceviche op een bordje met de avocadomousse.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>\u00a0foto: namiddagzicht op de bergen.
