Niet te verwarren met die andere beroemde dip de tzatziki, gemaakt van yoghurt, knoflook en komkommer. Deze populaire saus wordt in Griekenland op vele wijzen bereid, met geurige verse knoflook. Als metgezel van vlees, groenten of brood. Of bij een eitje. In de Griekse keuken maakt men veel gebruik van knoflook. Mensen kweken het zelf in hun tuinen of in potten. Verse knoflook is zoet en zacht. Ik maak de skordalia af met een beetje dragonazijn. Glaasje ouzo erbij, warm brood. Ogen dicht en dromen over de Cycladen.<\/p>\n<p>Nodig:<\/p>\n<p>6 tenen knoflook<br \/>\n2 sneden oud witbrood zonder korst<br \/>\n100 g blanke amandelen<br \/>\n1 beker melk<br \/>\n1,5 dl olijfolie<br \/>\n2 el citroensap<br \/>\n2 el dragonazijn<br \/>\npeper en zout<br \/>\n1 tl suiker<\/p>\n<p>Bereiding:<\/p>\n<p>Knoflook pellen en fijn snijden. De amandelen fijnhakken. Het brood in wat melk laten weken en uitknijpen<br \/>\nDoe het brood, de amandelen, knoflook en olie in een smalle kom doen en pureer het met de staafmixer. Traditioneel wordt deze saus gemaakt in een vijzel. Voeg peper en zout toe. Maak de saus af met wat azijn, suiker en citroensap.
