Ik vind deze muziek sprookjesachtig. Muziek van de componist Joseph Canteloube. Tussen 1924 en 1955 zette deze man traditionele herders- \u00a0en volksliederen om naar klassieke muziek. voor een heel orkest.<\/div>\n<div>In mijn kookleesboek<strong> Gereons Keuken Thuis*<\/strong> staat een stevig gerecht uit de Auvergne.\u00a0Het Centraal Massief vormt het hart van de Auvergne en is een ruig en onherbergzaam gebied met oude\u00a0vulkanen en afgesleten bergplateaus. Het wonen en werken in deze streek is fysiek altijd zwaar geweest. Vandaar dat de keuken zich kenmerkt door stevige boerse gerechten.<\/div>\n<p>Vandaag aligot, een aardappel kaaspuree, stevige kost. Deze aligot smaakt heerlijk bij wildworstjes. Na een maaltijd als deze kan een Auvergnat er weer tegenaan. Bij de stevige smaken van wild en aligot\u00a0past een Cahors van de tannat druif goed.<\/p>\n<p>Nodig 4 personen:<\/p>\n<div>\u00a01 kg kruimige aardappels<\/div>\n<div>2 tenen knoflook<br \/>\n150 ml zure room<br \/>\n125 g gemalen Cantal of Gruyere<br \/>\n1 dl halfvolle melk<br \/>\nzout en peper uit de molen<\/div>\n<div><\/div>\n<div>Bereiding:<\/div>\n<div><\/div>\n<div>Schil de aardappels en breng ze met wat\u00a0zout aan de kook. Kook de aardappels in 20 minuten gaar en giet ze af. Pel de knoflook en hak deze fijn. Verwarm in een pannetje de knoflook en de zure room. Voeg de aardappels toe en maak met de stamper een puree. Meng de kaas en melk er door heen en klop het geheel tot een mooie smeu\u00efge en luchtige puree.
